P\u00e5 en av bilderna fr\u00e5n en tidigare p\u00e5sk ser man hur pajerna st\u00e5r och kallnar ute i sn\u00f6pudret:)<\/span><\/h3>\n<p>Det h\u00e4r \u00e4r \u00e5ter igen ett recept fr\u00e5n k\u00f6ksguden Jamie Oliver. Vi serverar den g\u00e4rna som den \u00e4r, eventuellt med en klick l\u00e4ttvispad gr\u00e4dde. N\u00e4r det \u00e4r hallons\u00e4song \u00e4r det gott med n\u00e5gra f\u00e4rska hallon till, men den g\u00f6r sig alldeles utm\u00e4rkt p\u00e5 egen hand. Jamie har h\u00e4mtat inspiration fr\u00e5n klassiskt fransk och italiensk tarte p\u00e5 citron. En del recept f\u00f6reskriver sm\u00f6r i fyllningen mer likt lemoncurd, medan b\u00e5de Jamie och jag f\u00f6redrar den h\u00e4r varianten med gr\u00e4dde som ger en lite luftigare kr\u00e4mig fyllning. N\u00e4r blandningen g\u00e5tt ihop och blivit smulig tills\u00e4tter du kallt vatten och arbetar snabbt ihop till en boll. Det \u00e4r viktigt att inte arbeta degen f\u00f6r mycket. R\u00f6r f\u00f6rsiktigt ner gr\u00e4dden och citron- och limejuicen. Fyll det f\u00f6rgr\u00e4ddade pajskalet och gr\u00e4dda i ugnen i ca 40 minuter p\u00e5 180 grader. Jag brukar s\u00e4tta klockan p\u00e5 en halvtimme och d\u00e5 kolla om fyllningen precis stelnat lite. Den blir kr\u00e4mig och h\u00e4rlig.
