Som s\u00e5 ofta smaks\u00e4tter jag g\u00e4rna med en skv\u00e4tt vitt vin f\u00f6r det extra piffet.<\/h3>\n<h3>Den som vill lyxa till det kan g\u00e4rna h\u00e4lla i lite tryffelolja strax f\u00f6re serveringen. Vill man kan man ha r\u00e4kor i vid serveringen, eller som p\u00e5 bilden cr\u00e8me fra\u00eeche blandad med rom av n\u00e5got slag. Ett gott br\u00f6d till och du har en l\u00e4ttlagad god nyttig middag, som v\u00e4rmer i rusket.<\/h3>\n<p>Den som vill g\u00f6ra en snabbvariant hoppar \u00f6ver schalottenl\u00f6ken, men jag tycker det blir godare med den.<\/p>\n<h4><em>Du beh\u00f6ver till ca 4 personer:<\/em><\/h4>\n<p>1 stort blomk\u00e5lshuvud eller tv\u00e5 sm\u00e5, skuret i buketter<\/p>\n<p>4-5 shalottenl\u00f6kar, finhackade (det g\u00e5r \u00e4ven bra med gul l\u00f6k, men blir godare med shalotten)<\/p>\n<p>2-3 msk sm\u00f6r<\/p>\n<p>2 liter vatten<\/p>\n<p>gr\u00f6nsaksbuljong \u2013 en god sort, helst utan glutamat<\/p>\n<p>\u00bd-1 dl gr\u00e4dde<\/p>\n<p>en skv\u00e4tt vitt vin<\/p>\n<p>ev. lite peppar<\/p>\n<h4><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/h4>\n<p>Ta bort de yttre bladen fr\u00e5n blomk\u00e5lshuvudet, sk\u00e4r i buketter. Finhacka shalottenl\u00f6ken, fr\u00e4s den i sm\u00f6ret s\u00e5 den blir mjuk utan att ta f\u00e4rg. Koka under tiden upp vattnet med buljongen. L\u00e4gg i blomk\u00e5lsbuketterna och den sm\u00f6rstekta shalottenl\u00f6ken. L\u00e5t koka i 20-30 minuter tills blomk\u00e5len \u00e4r helt mjuk. Tag soppan av v\u00e4rmen. Mixa med en mixerstav. Tills\u00e4tt vitt vin och gr\u00e4dde efter smak och mixa g\u00e4rna lite till s\u00e5 den skummar.
