Just idag blir det helstekt entrec\u00f4te, som jag g\u00e4rna serverar med det underbara sm\u00f6ret p\u00e5 soltorkade tomater och f\u00e4rskpotatis eller ugnsstekt potatis med rosmarin beroende p\u00e5 \u00e5rstid. Det \u00e4r enkelt och g\u00e5r fort, i arbetsinsats. Sedan sk\u00f6ter sig steken i ugnen. Har jag gott om tid l\u00e5ter jag den steka p\u00e5 ganska l\u00e5g temperatur f\u00f6r att&nbsp;f\u00e5 k\u00f6ttet extra saftigt och fint.<\/h3>\n<h3>Tillbeh\u00f6ren varierar jag efter tillg\u00e5ng, \u00e5rstid, tycke, smak och tillf\u00e4lle. St\u00e4ll in k\u00f6ttet i ugnen. Sedan st\u00e5r k\u00f6ttet d\u00e4r och steker sig sj\u00e4lv. Du beh\u00f6ver bara kolla temperaturen. Den som vill steker k\u00f6ttet hastigt i stekpanna p\u00e5 h\u00f6gsta v\u00e4rme f\u00f6r att ge k\u00f6ttet f\u00e4rg innan det st\u00e4lls in i ugnen, men det g\u00e5r att hoppa \u00f6ver. Det s\u00e4ger inte minst v\u00e5r n\u00e4sta satsning f\u00f6r det stora matlagningspriset Bocuse d&#8217;Or, Adam och Albin, som i och f\u00f6r sig g\u00e4rna snabbt bryner k\u00f6ttet f\u00f6r att ge det en fin yta eftersom de sedan steker k\u00f6ttet i l\u00e5ga temperaturer ner till 80 grader f\u00f6r fantastisk saftighet. Det viktiga \u00e4r alltid k\u00f6ttets&nbsp;innertemperatur. Jag tar alltid ut kalvsteken n\u00e4r termometern visar 55-56 grader f\u00f6r att det inte ska blir f\u00f6r \u00f6verstekt.
