Det blev en v\u00e4ldigt god mustig pasta i riktig italiensk anda. Har du vattenkokare g\u00e5r det fortare och \u00e4r mer energisn\u00e5lt att koka upp vattnet d\u00e4r f\u00f6rst, har jag l\u00e4rt mig.<\/p>\n<p>Tv\u00e4tta zucchinin och auberginen, sk\u00e4r i l\u00e5nga skivor och d\u00e4refter i <a href=\"http:\/\/katinkaskitchen.com\/?attachment_id=12520\" rel=\"attachment wp-att-12520\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-12520\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/08\/papardelle-zucchini-aubergine-2-Katinkas-Kitchen-051-21-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/08\/papardelle-zucchini-aubergine-2-Katinkas-Kitchen-051-21-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/08\/papardelle-zucchini-aubergine-2-Katinkas-Kitchen-051-21-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/08\/papardelle-zucchini-aubergine-2-Katinkas-Kitchen-051-21-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>skivor. Skala l\u00f6ken, dela den p\u00e5 mitten och sk\u00e4r halvm\u00e5neformade skivor. Skala och hacka vitl\u00f6ken. Sk\u00e4r tomaterna i bitar eller coctailtomaterna i halvor.<\/p>\n<p>Hetta upp n\u00e5gra msk olivolja i en stekpanna, l\u00e4gg i l\u00f6ken f\u00f6rst, d\u00e4refter vitl\u00f6ken och sedan auberginen. Den tar l\u00e4ngre tid att steka mjuk \u00e4n zucchinin. Auberginen \u00e4r till skillnad fr\u00e5n zucchinin inte god n\u00e4r den \u00e4r lite al dente och inte helt genomstekt. Men den suger upp mycket fett s\u00e5 jag brukar bara l\u00e4gga i den och steka helt kort innan jag forts\u00e4tter med att tills\u00e4tta tomaterna och sedan vinet s\u00e5 det kan st\u00e5 och puttra mjukt. Smaks\u00e4tt med salt, peppar, chili, rivet citronskal och \u00f6rtkryddor. L\u00e5t st\u00e5 och puttra tills auberginen \u00e4r n\u00e4stan klar. D\u00e5 l\u00e4gger du i zucchiniskivorna och l\u00e5ter dem bli precis s\u00e5 mjuka som du vill ha dem.<\/p>\n<p>Under tiden har du lagt i pastan n\u00e4r du m\u00e4rker att s\u00e5sen b\u00f6rjar bli klar &#8211; det h\u00e4r \u00e4r verkligt snabblagad mat, s\u00e5 du kan n\u00e4stan b\u00f6rja koka pastan n\u00e4r du b\u00f6rjar med s\u00e5sen.<\/p>\n<p>H\u00e4ll av pastan n\u00e4r den \u00e4r al dente eller strax f\u00f6re dess, eftersom den mjuknar lite till efter att ha h\u00e4llts av och n\u00e4r den kommer i kontakt med s\u00e5sen, \u00e4ven om det h\u00e4r \u00e4r en ganska torr s\u00e5s.<\/p>\n<p>H\u00e4ll den avrunna pastan i pannan med s\u00e5sen, eller om pannan \u00e4r f\u00f6r liten &#8211; h\u00e4ll pastan i en serveringssk\u00e5l och h\u00e4ll p\u00e5 s\u00e5sen, r\u00f6r om ordentligt. Anv\u00e4nd g\u00e4rna en pastaslev och r\u00f6r f\u00f6rsiktigt s\u00e5 att pastan f\u00e5r n\u00e5got av s\u00e5sen p\u00e5 sig \u00f6verallt utan att g\u00e5 s\u00f6nder. Tills\u00e4tt lite extra olivolja och en n\u00e4ve riven parmesan precis innan servering. Dekorera g\u00e4rna med hackade f\u00e4rska \u00f6rtkryddor.
