H\u00e4r har jag utg\u00e5tt fr\u00e5n ett av Jamie Olivers recept p\u00e5 persikokaka, men \u00e4ndrat en del och gjort en aprikospaj. Jag \u00e4lskar aprikoser som f\u00f6r mig smakar sol, v\u00e4rme och mitt \u00e4lskade Medelhav. Aprikoserna blir \u00e4nnu mer f\u00f6rf\u00f6riska av att kokas i en sockerlag med vanilj. Den som vill kan servera de inkokta aprikoserna som de \u00e4r till vaniljglass eller vispad gr\u00e4dde. Koka upp socker och vatten med den uppskurna vaniljst\u00e5ngen. L\u00e4gg i aprikoserna och l\u00e5t dem koka ca 5 minuter. St\u00e4ll \u00e5t sidan. Det h\u00e4r momentet kan sj\u00e4lvklart g\u00f6ras i f\u00f6rv\u00e4g, f\u00f6rvara aprikoserna svalt s\u00e5 h\u00e5ller de ganska l\u00e4nge.<\/p>\n<p>R\u00f6r sm\u00f6r och socker mjukt och por\u00f6st s\u00e5 det blir fluffigt och ljust. Den som vill kan ta hj\u00e4lp av en elvisp. R\u00f6r ner \u00e4ggulorna och vispa \u00e4ggvitorna separat med en msk socker till styvt skum. Den som vill kan \u00e4ven tills\u00e4tta n\u00e5gra msk av sockerlagen som \u00e4r full av aprikossaft- och smak.<\/p>\n<p>L\u00e4gg aprikoshalvorna i en smord pajform med snittytan upp\u00e5t (f\u00f6r att de inte ska f\u00f6rlora sin saft under gr\u00e4ddningen), bred smeten \u00f6ver och f\u00f6rs\u00f6k trycka ner smeten runtom aprikoserna. Str\u00f6 avslutningsvis socker \u00f6ver pajen. St\u00e4ll in i ugnen som du v\u00e4rmt till knappt 200 grader. Gr\u00e4dda ca 40 minuter. Titta till den s\u00e5 den inte blir br\u00e4nd. Du kan i s\u00e5 fall l\u00e4gga ett bakpl\u00e5tspapper \u00f6ver.
