Jag har f\u00f6rst\u00e5tt att det beror p\u00e5 att det oftast \u00e4r pakistanier som har indiska restauranger i v\u00e4st. Den \u00e4kta indiska maten \u00e4r sj\u00e4lvklart v\u00e4ldigt varierad beroende p\u00e5 vilken del av Indien den kommer fr\u00e5n. Det var alltid lika h\u00e4rligt, sp\u00e4nnande och ljuvligt gott! I Indien \u00e4ter man oftast inte naan, som h\u00f6r till det pakistanska muslimska k\u00f6ket, som man i och f\u00f6r sig \u00e4ven kan \u00e4ta p\u00e5 fantastiska tandoorirestauranger i just New Delhi. Indierna \u00e4ter roti eller chapati som \u00e4r oj\u00e4sta fullkornsbr\u00f6d. En raita, yoghurts\u00e5s, g\u00f6r jag ocks\u00e5 till och g\u00e4rna en hemgjord pikant chutney som jag kanske serverar tillsammans med mango chutney f\u00f6re curryn med papadams, de tunna friterade linsbr\u00f6den. Eftersom de \u00e4r gjorda p\u00e5 linser \u00e4r det v\u00e4rt att notera att de \u00e4r glutenfria. L\u00e4nkar till chutney, raita, cachumber och chapati finns l\u00e4ngst ner h\u00e4r.<\/h3>\n<h3>Nu till lammcurryn. Hemligheten med en bra curry \u00e4r kryddblandningen. Gl\u00f6m bort allt vad den krydda som finns f\u00e4rdig p\u00e5 burk och kallas curry \u00e4r. Idag ska vi g\u00f6ra en ljuvlig lammcurry.&nbsp;Jag g\u00f6r den antingen p\u00e5 grytbitar, p\u00e5 eller utan ben, som t\u00e5l l\u00e5ng kokning s\u00e5 k\u00f6ttet blir mycket m\u00f6rt och n\u00e4stan faller av benen. Ibland g\u00f6r jag en lyxversion p\u00e5 benfri lammstek. Det \u00e4r d\u00e5 viktigt att t\u00e4nka p\u00e5 att k\u00f6ttet m\u00e5ste plockas upp efter den f\u00f6rsta stekningen och l\u00e4ggas i curryn f\u00f6rst senare, f\u00f6r att det inte ska bli torrt och trist. Men s\u00e5sen m\u00e5r bra av att f\u00e5 koka ihop och kanske till och med lagas dagen innan s\u00e5 den blir riktigt mustig och h\u00e4rlig i smakerna. Sk\u00e5lla dem g\u00f6r du genom att sk\u00e4ra ett kryss i toppen, tr\u00e4 tomaten p\u00e5 en gaffel och doppa den n\u00e5gon minut i kokande vatten. D\u00e5 brukar det vara l\u00e4tt att skala dem. Sk\u00e4r bort skaftf\u00e4stet ocks\u00e5 efter att du delat tomaten.<\/p>\n<p>Om yoghurten \u00e4r l\u00f6s kan det vara en id\u00e9 att l\u00e5ta den rinna av i ett melittafilter f\u00f6r att f\u00e5 den tjock.<\/p>\n<p>Hetta upp ca 3 msk olja i en gryta till medelh\u00f6g v\u00e4rme. Jag brukar ta en stor gjutj\u00e4rnsgryta. L\u00e4gg i l\u00f6ken, vitl\u00f6ken, ingef\u00e4ran och chilin. Fr\u00e4s under omr\u00f6rning i n\u00e5gra minuter tills l\u00f6ken blivit mjuk utan att bli brun. Tills\u00e4tt nejlikor, kanelst\u00e5ng, kardemumma, pepparkorn, hela korianderkorn samt ev. senapsfr\u00f6n och r\u00f6r om. Tills\u00e4tt chilipulver, spiskummin och gurkmeja. Forts\u00e4tt att r\u00f6ra runt. Tills\u00e4tt k\u00f6ttet och fr\u00e4s det i kryddblandningen. Ibland om jag ska g\u00f6ra stor sats steker jag helt enkelt k\u00f6ttet i en stekpanna bredvid och kryddar det under stekning med gurkmeja, chili, vitl\u00f6k, ingef\u00e4ra (ibland tar jag torkad h\u00e4r, men har f\u00e4rsk i sj\u00e4lva s\u00e5sen), spiskummin och peppar. L\u00e4gg k\u00f6ttet \u00e5t sidan om du anv\u00e4nder m\u00f6rt benfritt k\u00f6tt. N\u00e4r du steker kryddorna kan det ibland beh\u00f6vas sp\u00e4das med lite vatten f\u00f6r att de inte ska br\u00e4nna fast. L\u00e5t s\u00e5sen puttra ihop, smaka av om du beh\u00f6ver mer salt eller kryddor. T\u00e4nk p\u00e5 att du \u00e4ven ska tills\u00e4tta yoghurten som kommer mildra smakerna avsev\u00e4rt. L\u00e5t s\u00e5sen puttra, g\u00e4rna n\u00e5gon timme s\u00e5 smakerna blandas och den blir mustig och h\u00e4rlig och k\u00f6ttet blir riktigt m\u00f6rt om du valt grytbitar.<\/p>\n<p>Ca 15-20 minuter innan servering tills\u00e4tter du yoghurten och l\u00e5ter s\u00e5sen bli varm innan du l\u00e4gger i det m\u00f6ra benfria k\u00f6ttet, om du valt det. Var f\u00f6rsiktig h\u00e4r och l\u00e4gg i lite yoghurt i taget. N\u00e4r jag gjorde lammcurryn vid det h\u00e4r tillf\u00e4llet d\u00e5 jag fotade blev det inte helt lyckat eftersom jag hade i f\u00f6r mycket yoghurt och d\u00e5 \u00e4r det sv\u00e5rt att f\u00e5 tillbaka den h\u00e4rliga smaksymfonin igen. L\u00e5t puttra ihop och kontrollera k\u00f6ttet s\u00e5 det \u00e4r lagom genomstekt. Jag tycker om n\u00e4r det fortfarande har en lite rosa mitt, n\u00e4r det \u00e4r fil\u00e9 eller benfri lammstek. Str\u00f6 f\u00e4rsk hackad koriander \u00f6ver precis innan servering.<\/p>\n<p>Servera med basmatiris och kanske n\u00e5got eller alla tillbeh\u00f6r jag beskrev ovan.
