Ibland steker jag dem hela i ugn eller stkpanna, ibland blir de en h\u00e4rlig pastas\u00e5s. En favorit \u00e4r medelhavskycklingen.<\/h3>\n<h3>H\u00e4r har jag stekt dem med \u00f6rter och serverat dem med en god l\u00e4tt s\u00e5s p\u00e5 schalottenl\u00f6k som stekts eller snarare kokats mjuk i olivolja och sedan mixats med yoghurt och f\u00e4rska \u00f6rter. Jag tog basilika och timjan, men du kan v\u00e4lja det du vill och har. Till serverade jag en h\u00e4rlig r\u00f6ra p\u00e5 zucchini stekt med l\u00f6k, citron och \u00f6rter. L\u00e5t dem ligga framme s\u00e5 de blir rumstempererade medan du forts\u00e4tter att g\u00f6ra s\u00e5sen, zucchinir\u00f6ran och kanske klyftpotatisen eller vad du valt att servera till.<\/p>\n<p>Stek den finhackade schalottenl\u00f6ken mjuk p\u00e5 ganska l\u00e5g v\u00e4rme s\u00e5 den snarare blir kokt i oljan , confitstekt, eller snarare -kokt s\u00e4ger man p\u00e5 k\u00f6ksfranska. N\u00e4r l\u00f6ken \u00e4r mjuk och precis b\u00f6rjat ta f\u00e4rg h\u00e4ller du den i ett k\u00e4rl som du kan anv\u00e4nda stavmixern i. L\u00e5t l\u00f6ken svalna och h\u00e4ll p\u00e5 yoghurten och l\u00e4gg i basilikan. Salta och peppra lite. Mixa till en sl\u00e4t s\u00e5s som blir h\u00e4rligt ljusgr\u00f6n i f\u00e4rgen och alldeles underbar i smaken. Smaka av med salt och peppar, kanske n\u00e5gra korn socker f\u00f6r att balansera yoghurtens syra. Jag hade \u00e4ven i n\u00e5gon msk olivolja extra som gav fyllighet, fin smak och bra konsistens. St\u00e4ll s\u00e5sen \u00e5t sidan eller svalt till servering.<\/p>\n<p>Stek kycklingfil\u00e9erna p\u00e5 ganska h\u00f6g v\u00e4rme f\u00f6rst, dra sedan ner v\u00e4rmen n\u00e5got f\u00f6r den fortsatta stekningen s\u00e5 fil\u00e9erna blir genomstekta. Det f\u00e5r inte vara n\u00e5got rosa i mitten. Om du \u00e4r os\u00e4ker sticker du i fil\u00e9n och ser att v\u00e4tskan som kommer ut \u00e4r klar, inte rosa.
