Potatis- och purjol\u00f6kssoppa \u00e4r ju en gammal fransk klassiker, men i just den h\u00e4r tappningen med kantarellfond har i vart fall jag aldrig t\u00e4nkt p\u00e5 att g\u00f6ra den. Jag tog helt enkelt fel, utan glas\u00f6gon, och tog kantarellfond med likaledes gul etikett som den t\u00e4nkta kycklingfonden f\u00f6r att ge extra mustighet tillsammans med gr\u00f6nsaksbuljongen. D\u00e5 kan den som vill \u00e4ven dekorera med r\u00f6kt lax, r\u00e4kor, eller kanske en klick vispad gr\u00e4dde med forellrom eller laxstrimlor.<\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:<\/strong><\/em><\/p>\n<p>2 purjol\u00f6kar &#8211; anv\u00e4nd hela, \u00e4ven s\u00e5 mycket av det gr\u00f6na som m\u00f6jligt<\/p>\n<p>6 potatisar, skalade och skurna i bitar<\/p>\n<p>1 liter vatten<a href=\"http:\/\/katinkaskitchen.com\/?attachment_id=13762\" rel=\"attachment wp-att-13762\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13762\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/09\/potatis-purjolokssoppa-Katinkas-Kitchen-3-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/09\/potatis-purjolokssoppa-Katinkas-Kitchen-3-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/09\/potatis-purjolokssoppa-Katinkas-Kitchen-3-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/09\/potatis-purjolokssoppa-Katinkas-Kitchen-3-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1-1 1\/2 t\u00e4rning eller motsvarande gr\u00f6nsaksbuljong (jag anv\u00e4nde Bioforce gr\u00f6nsaksbuljong)<\/p>\n<p>1 msk kantarellfond p\u00e5 flaska<\/p>\n<p>salt och peppar<\/p>\n<p>en skv\u00e4tt vitt vin (drygt 1\/2 dl)<\/p>\n<p>ev. 1\/2 dl gr\u00e4dde f\u00f6r den som vill reda av soppan n\u00e5got &#8211; vegetarianen tar Oatlys goda havregr\u00e4dde<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:<\/strong><\/em><\/p>\n<p>Koka upp vattnet med buljongen. Under tiden tv\u00e4ttar du och strimlar purjol\u00f6ken samt skalar potatisen och delar den i bitar.<\/p>\n<p>L\u00e4gg i potatisen f\u00f6rst och d\u00e4refter purjol\u00f6ken i vattnet. L\u00e5t koka tills potatis och purjol\u00f6k mjuknat helt. Mixa med en stavmixer. H\u00e4ll i en skv\u00e4tt vitt vin och tills\u00e4tt gr\u00e4dden om du vill ha soppan lite redd och avrundad.
