Till skillnad fr\u00e5n en spansk tortilla (spansk omelett med olivoljestekt potatis) v\u00e4nds den inte, utan steks klart p\u00e5 en sida. Den kan st\u00e4llas in i ugn f\u00f6r att gr\u00e4ddas f\u00e4rdigt om man vill och har en stekpanna vars handtag t\u00e5l att st\u00e4llas i ugn.<\/h3>\n<h3>H\u00e4r har jag fyllt frittatan med rester av kokt potatis, mor\u00f6tter, b\u00f6nor, l\u00f6k och strimlor av en h\u00e4rligt kryddig spansk korv, chorizo. Jag anv\u00e4nde chili explosion och chili-limekryddblandningen fr\u00e5n Santa Maria<\/p>\n<p>olivolja till stekning och att ringla \u00f6ver vid servering<\/p>\n<p>Ev. n\u00e5gra \u00f6rtkryddor &#8211; basilika, k\u00f6rvel, persilja<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:<\/strong><\/em><\/p>\n<p>Skiva potatisen och sk\u00e4r gr\u00f6nsakerna i bitar. Sk\u00e4r l\u00f6ken i bitar. Stek f\u00f6rst l\u00f6ken och tills\u00e4tt sedan potatisen, krydda och stek ett tag. Tills\u00e4tt \u00f6vriga gr\u00f6nsaker och stek ett litet tag till. Tills\u00e4tt sist den strimlade korven.<\/p>\n<p>H\u00e4ll de l\u00f6st uppvispade \u00e4ggen \u00f6ver allt i stekpannan. S\u00e4nk v\u00e4rmen s\u00e5 att frittatan kan stelna men inte blir br\u00e4nd i botten. Lyft f\u00f6rsiktigt med en gaffel f\u00f6r att f\u00f6ra ner l\u00f6st \u00e4ggvisp mot botten, som n\u00e4r du g\u00f6r en vanlig omelett. St\u00e4ll eventuellt in frittatan i ugnen om handtaget p\u00e5 stekpannan t\u00e5l det. L\u00e5t den annars st\u00e5 kvar p\u00e5 spisen, g\u00e4rna med ett kastrullock \u00f6ver f\u00f6r att beh\u00e5lla v\u00e4rmen.
