H\u00e4r har jag serverat de pestofyllda fiskfil\u00e9erna med sm\u00f6rslungad spenat, balsamicostekta tomater och kokt potatis av n\u00e5gon god sort, t.ex. D\u00e5 g\u00f6r jag g\u00e4rna tomaterna med ruccola, som syns p\u00e5 bilden) ca 30 gram sm\u00f6r 1-2 dl vitt vin lite peppar (salt beh\u00f6vs inte eftersom peston brukar vara ganska salt) F\u00e4rsk bladspenat &#8211; t\u00e4nk p\u00e5 att den sjunker ihop till ingenting, s\u00e5 det g\u00e5r \u00e5t ganska mycket en rej\u00e4l klick sm\u00f6r 1-2 askar cocktailtomater skurna i halvor ev. lite strimlad salladsl\u00f6k 2-3 msk olivolja n\u00e5gon msk god balsamvin\u00e4ger<\/p>\n<h4>G\u00f6r s\u00e5 h\u00e4r:<\/h4>\n<p>Sm\u00f6rj en ugnsfast form. L\u00e4gg en klick pesto p\u00e5 ena halvan av varje fiskfil\u00e9 och vik fil\u00e9n p\u00e5 mitten s\u00e5 peston ligger som en fyllning inuti den vikta fil\u00e9n. Arrangera dem vackert i ugnsformen. L\u00e4gg en klick sm\u00f6r p\u00e5 varje fisk. H\u00e4ll vinet runt om. Hit kan du med f\u00f6rdel f\u00f6rbereda. N\u00e4r det s\u00e5 \u00e4r dags att servera och fisken st\u00e5r i ugnen och potatisen n\u00e4stan \u00e4r f\u00e4rdigkokad hettar du upp oljan i en stekpanna och fr\u00e4ser hastigt cocktailtomaterna, g\u00e4rna med lite hackad salladsl\u00f6k, s\u00e5 att de precis mjuknar. H\u00e4ll avslutningsvis \u00f6ver balsamvin\u00e4ger, salta och peppra och h\u00e4ll upp i en serveringssk\u00e5l. Hetta upp en rej\u00e4l klick sm\u00f6r med en aning olivolja i stekpannan (du kan ta samma), l\u00e4gg i bladspenaten och r\u00f6r runt hastigt, l\u00e4gg ev. ett lock \u00f6ver ett litet tag f\u00f6r att f\u00e5 spenaten att precis falla ihop men inte mer. Salta och peppra, och riv ev. lite muskot \u00f6ver.&nbsp;H\u00e4ll upp i en serveringssk\u00e5l. Servera fisken direkt tillsammans med tillbeh\u00f6ren. Det \u00e4r gott att pressa potatisen till den h\u00e4r r\u00e4tten s\u00e5 man kan suga upp den goda s\u00e5sen.
