Schweizarna serverar den oftast med skinka och\/eller bacon och stekt \u00e4gg (som p\u00e5 bilden h\u00e4r bredvid &#8211; godare \u00e4n den ser ut!), ibland \u00e4ven med ost \u00f6ver, eller i. I s\u00e4song kan man ibland f\u00e5 r\u00f6stin med f\u00e4rska sm\u00f6rstekta kantareller, eventuellt avredda med lite gr\u00e4dde \u2013 ljuvligt gott.<\/p>\n<p>R\u00f6stin kan \u00e4ven med f\u00f6rdel serveras som den \u00e4r till stekt k\u00f6tt eller kyckling. Men nu till den traditionella varianten:<\/p>\n<p>N\u00e4r man ska steka r\u00f6sti \u00e4r det faktiskt b\u00e4st att anv\u00e4nda lagrad potatis. Det beror p\u00e5 att den inneh\u00e5ller mer st\u00e4rkelse \u00e4n f\u00e4rskpotatis, och d\u00e4rmed binder ihop sig b\u00e4ttre s\u00e5 att det blir just en potatiskaka.<\/p>\n<p>Skala ett antal potatisar, riv dem ganska grovt p\u00e5 ett rivj\u00e4rn. Hetta upp sm\u00f6r och olja i en bra stekpanna och l\u00e4gg i den rivna potatisen. Man brukar g\u00f6ra en r\u00f6sti per person, p\u00e5 kanske 2-4 potatisar, beroende p\u00e5 storlek. Peppar och salt och fr\u00e4s runt lite. Forma ganska snabbt till en tunn kaka \u2013 lika stor som stekpannan. Dra ner v\u00e4rmen n\u00e4r potatisen tagit lite f\u00e4rg och l\u00e5t steka mjuk, eventuellt med lock \u00f6ver. V\u00e4nd potatiskakan med hj\u00e4lp av en tallrik och l\u00e5t den steka s\u00e5 den blir gyllene och krispig \u00e4ven p\u00e5 andra sidan. Stj\u00e4lp \u00f6ver r\u00f6stin p\u00e5 ett fat och servera med stekt skinka eller bacon, med nystekta kantareller eller naturell som potatistillbeh\u00f6r till middagen.<\/p>\n<p>Ibland n\u00e4r det \u00e4r sv\u00e5rt att v\u00e4nda r\u00f6stin st\u00e4ller jag helt enkelt in stekpannan i ugn, ganska h\u00f6gt upp, f\u00f6r att den ska f\u00e5 f\u00e4rg \u00e4ven p\u00e5 ovansidan.
