Krydda k\u00f6ttet med tryffelsalt och peppar. Stek det i panna p\u00e5 h\u00f6gsta v\u00e4rmen s\u00e5 det f\u00e5r fin f\u00e4rg runtom. Det g\u00e5r fort. Har du lite mer br\u00e5ttom kan du \u00f6ka v\u00e4rmen till ca 150 grader. Vid de l\u00e4gre temperaturerna f\u00e5r du saftigare k\u00f6tt. Hur l\u00e5ng tid det tar beror sj\u00e4lvklart p\u00e5 hur stora k\u00f6ttbitarna \u00e4r. De h\u00e4r bitarna vi tillagade tog ca 45 minuter i knappa 90 grader. Anv\u00e4nd en k\u00f6ttermometer! Innertemperaturen ska vara 57 grader f\u00f6r rosa\/medium-rare, d\u00e5 jag tycker entrec\u00f4ten kommer b\u00e4st till sin r\u00e4tt.<\/p>\n<p>Under tiden som k\u00f6ttet steks i ugnen f\u00f6rbereder du dina tillbeh\u00f6r och tryffelsm\u00f6ret.<\/p>\n<p>N\u00e4r k\u00f6ttet \u00e4r klart l\u00e5ter du det vila ett tag under folie innan du sk\u00e4r upp det.
