G\u00f6r ist\u00e4llet enkelt en god fond p\u00e5 dem f\u00f6r att sedan g\u00f6ra denna ljuvligt kr\u00e4miga och fylliga soppa som jag g\u00e4rna serverar som f\u00f6rr\u00e4tt.<\/h3>\n<p>En bisque \u00e4r helt enkelt en soppa tillagad p\u00e5 skaldjur. Den kan likaledes lagas p\u00e5 r\u00e4kor, hummer eller krabba.<\/p>\n<p>Det h\u00e4r \u00e4r en f\u00f6rsvenskad, f\u00f6renklad version av den omst\u00e4ndliga franska bisquen.<\/p>\n<p>Den g\u00e5r utm\u00e4rkt att servera som den \u00e4r, men den som vill kan g\u00f6ra det extra lyxigt med kr\u00e4ftbitar eller r\u00e4kor vid serveringen. P\u00e5 s\u00e5 vis f\u00e5r jag snabbt en god och lite lyxig f\u00f6rr\u00e4tt med mycket sm\u00e5 och enkla medel.<a href=\"http:\/\/katinkaskitchen.com\/?attachment_id=15137\" rel=\"attachment wp-att-15137\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15137\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/11\/IMG_0342-300x224.jpg\" alt=\"\" width=\"300\" height=\"224\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/11\/IMG_0342-300x224.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/11\/IMG_0342-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/11\/IMG_0342-1024x764.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>En klassisk fransk bisque \u00e4r t\u00e4mligen omst\u00e4ndlig att g\u00f6ra och f\u00f6reskriver malande av skalen, pur\u00e9ande av hummerk\u00f6tt, tillagning av skaldjurssm\u00f6r f\u00f6r slutlig avrundning m.m., men jag tycker det blir i princip lika gott med det h\u00e4r mycket enklare tillv\u00e4gag\u00e5ngss\u00e4ttet.<\/p>\n<p>B\u00f6rja med att g\u00f6ra fonden enligt recept som du finner h\u00e4r bredvid.<\/p>\n<p>Den reducerade fonden, som redan \u00e4r smaksatt med vitt vin blandar du sedan bara med gr\u00e4dde till \u00f6nskad konsistens och smak. Kanske lite cayennepeppar, salt och en skv\u00e4tt cognac och den rykande heta, lena soppan \u00e4r f\u00e4rdig att serveras, kanske som h\u00e4r i en lyxigare version till en festmiddag. P\u00e5 bilden \u00e4r den serverad med s\u00e5v\u00e4l en bit halstrad g\u00f6s och en kr\u00e4ftklo samt \u00f6rtolja f\u00f6r dekoration, men det r\u00e4cker alldeles utm\u00e4rkt med en bit kr\u00e4ftk\u00f6tt som vacker dekoration och smakbit i den lena soppan.
