Ta lite f\u00f6rsiktigt i b\u00f6rjan och smaka av. Chilins hetta framtr\u00e4der ofta mer efter en tids kokning. L\u00e4gg i de hackade sardellfil\u00e9erna och l\u00e5t puttra. Pressa i citron och riv i lite citronskal (fr\u00e5n en halv citron). Citronsaft kan du beh\u00f6va mer av sedan \u2013 men v\u00e4nta och smaka av innan du har i mer. Sl\u00e5 i en liten skv\u00e4tt vin om du vill ha det i. L\u00e5t puttra n\u00e5gon minut innan du tills\u00e4tter tomatpur\u00e9n. Ta inte all tomatpur\u00e9 direkt, utan smaka av s\u00e5 du f\u00e5r en fin balans. Allt beror p\u00e5 hur framtr\u00e4dande just dina sardeller \u00e4r. Det ska bli en fin balans i smakerna \u2013 het med lite syra, och s\u00e4lta fr\u00e5n sardellerna. R\u00f6ran blir ganska koncentrerad i smakerna. F\u00f6r en n\u00e5got mildare variant kan du tills\u00e4tta \u00bd-1 dl passerade tomater, om du vill. Smaks\u00e4tt med \u00f6rtkryddor och en liten nypa socker f\u00f6r att balansera syrligheten och f\u00e5 fram fylligheten. L\u00e5t puttra ihop och servera i sk\u00e5l till br\u00f6d eller p\u00e5 crostini. Du kan g\u00f6ra crostinis sj\u00e4lv genom att skiva en baguette och rosta skivorna i ugnen p\u00e5 200 grader tills de torkat och b\u00f6rjat f\u00e5 en gyllene ton men absolut inte br\u00e4nts. Vill du kan du dekorera de avsvalnade crostinisarna genom att bre p\u00e5 tomat- och sardellr\u00f6ran och l\u00e4gga p\u00e5 ett blad basilika eller en liten skiva citron till exempel.
