Jag g\u00f6r g\u00e4rna en stor sats och har kvar en del i kylen eller fryser in f\u00f6r att anv\u00e4nda till andra anr\u00e4ttningar. Till k\u00f6tt, vare sig det \u00e4r lammstek eller annat k\u00f6tt \u00e4r det ett h\u00e4rligt tillbeh\u00f6r, inte minst under vinterhalv\u00e5ret. Ratatouillen \u00e4r \u00e4ven god som fyllning i en omelett eller som pastas\u00e5s, med eller utan skinka. Den kan \u00e4ven f\u00f6rst\u00e4rkas med b\u00f6nor och serveras som egen r\u00e4tt med ris.<\/h3>\n<h4><em>Du beh\u00f6ver:<\/em><\/h4>\n<p>1 stor gul l\u00f6k eller 2 sm\u00e5 gula l\u00f6kar, skalade och skurna i bitar<\/p>\n<p>2-3 vitl\u00f6ksklyftor<\/p>\n<p>1 aubergine, skuren i bitar<\/p>\n<p>1 stor eller tv\u00e5 sm\u00e5 zucchini (kallas \u00e4ven squash), skuren i bitar<\/p>\n<p>2 paprikor &#8211; jag v\u00e4ljer helst r\u00f6da eller gula, urk\u00e4rnade och skurna i bitar<\/p>\n<p>1-2 burkar hackade eller hela tomater (n\u00e4r tomaterna \u00e4r i s\u00e4song eller jag \u00e4r utomlands anv\u00e4nder jag g\u00e4rna solmogna r\u00f6da fina tomater eller plommontomater)<\/p>\n<p>jag hittade n\u00e5gra sm\u00e5 chililiknande paprikor som hette agnello och var mycket mustiga och goda att ha i rataouillen<\/p>\n<p>\u00f6rtkryddor, t.ex. herbes de Provence, eller rosmarin och timjan<\/p>\n<p>1 dl vitt vin<\/p>\n<p>peppar och salt<\/p>\n<h4><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/h4>\n<p>Tv\u00e4tta och sk\u00e4r gr\u00f6nsakerna i bitar p\u00e5 ca 1,5-2 cm. Skala och hacka l\u00f6ken i lika stora bitar.<\/p>\n<p>Fr\u00e4s f\u00f6rst l\u00f6ken och vitl\u00f6ken i olja i en gryta &#8211; jag anv\u00e4nder helst gjutj\u00e4rnsgryta.<\/p>\n<p>Tills\u00e4tt d\u00e4refter auberginen och fr\u00e4s ett tag innan du tills\u00e4tter zucchinin. Tills\u00e4tt vinet och l\u00e5t puttra ihop.&nbsp;Tills\u00e4tt tomaterna och lite senare sist paprikan s\u00e5 den inte blir alldeles s\u00f6nderkokt.<\/p>\n<p>Krydda med tomatpur\u00e9, \u00f6rtkryddor, peppar och salt.<\/p>\n<p>L\u00e5t koka ihop under lock. Smaka av ifall du beh\u00f6ver mer tomatpur\u00e9, vin, kryddor eller salt.<\/p>\n<p>Servera ratatouillen som tillbeh\u00f6r till k\u00f6tt, lammstek, kyckling, lax eller annan fisk, som pastas\u00e5s, fyllning i omelett eller annat. Jag tog fram en stavmixer och mixade kvarbliven ratatouille och lade i botten p\u00e5 kokotter, kn\u00e4ckte i ett \u00e4gg i varje kokott och h\u00e4llde p\u00e5 lite gr\u00e4dde ovanp\u00e5 innan de bakades i ugn och serverades till r\u00f6kt lax &#8211; en h\u00e4rlig brunch.
