Jag brukar faktiskt ocks\u00e5 ta med stj\u00e4lken skalad och skuren i bitar men f\u00f6redrar du att g\u00f6ra med bara topparna kan du med f\u00f6rdel spara stj\u00e4lkarna och anv\u00e4nda vid senare tillf\u00e4lle till en annan pastas\u00e5s, eller i soppa, mousse eller n\u00e5got annat. Jag f\u00f6rv\u00e4ller oftast broccolin lite snabbt s\u00e5 den mjuknar men fortfarande har motst\u00e5nd, s\u00e5 vet man att den inte blir torr vid stekningen och dessutom g\u00e5r det fort att sv\u00e4nga ihop s\u00e5sen. Hetta upp olivoljan till medelv\u00e4rme i en lite st\u00f6rre stekpanna, eller trakt\u00f6rpanna. Fr\u00e4s vitl\u00f6ken en halv minut. L\u00e4gg d\u00e4refter i de finhackade sardellfil\u00e9erna, chilin och citronskalet fr\u00e5n \u00bd-1 tv\u00e4ttad citron. L\u00e5t fr\u00e4sa n\u00e5gra minuter och pressa sedan i citronsaften \u2013 b\u00f6rja med fr\u00e5n halva citronen, det brukar r\u00e4cka. Den andra halvan kan man l\u00e4gga fram vid serveringen f\u00f6r den som vill ha mer.<\/p>\n<p>H\u00e4ll p\u00e5 vinet och l\u00e5t puttra ihop lite innan du l\u00e4gger i broccolin och l\u00e5ter allt bli varmt och broccolin bli lagom kokt.
