Vispa f\u00f6rsiktigt &#8211; de ska snarare sl\u00e5s ihop \u00e4n att vispas. Vitorna ska blandas med gulorna men utan att vitorna blir f\u00f6r s\u00f6nderslagna, d\u00e5 h\u00e5ller inte omeletten ihop.<\/p>\n<p>Sk\u00e4r potatis och zucchini i bitar, strimla purjol\u00f6ken och skiva vitl\u00f6ken.<\/p>\n<p>Hetta upp oljan till medelh\u00f6g v\u00e4rme, stek gr\u00f6nsakerna under omr\u00f6rning. Krydda. Tills\u00e4tt skinkan efter ett tag.<\/p>\n<p>N\u00e4r gr\u00f6nsakerna tagit lite f\u00e4rg och blivit varma h\u00f6jer du f\u00f6rst v\u00e4rmen under stekpannan och h\u00e4ller sedan p\u00e5 \u00e4ggsmeten. Dra genast ner v\u00e4rmen till l\u00e4gre. Lyft hela tiden p\u00e5 \u00e4ggsmeten s\u00e5 att l\u00f6s smet rinner ner i botten och stelnar. Men var f\u00f6rsiktig s\u00e5 det inte blir \u00e4ggr\u00f6ra. Lyft och l\u00e5t rinna ner &#8211; om och om igen runtom. Smula fetaosten \u00f6ver.<\/p>\n<p>Du kan l\u00e4gga p\u00e5 ett lock f\u00f6r att frittatan ska bli helt klar och f\u00e5 v\u00e4rme \u00e4ven p\u00e5 ovansidan.
