N\u00e4r dottern var liten och jag h\u00e4lsade p\u00e5 farmor och farfar en g\u00e5ng i Frankrike ber\u00e4ttade farmor att hon hade handlat alla ingredienser och ville st\u00e5 bredvid n\u00e4r jag lagade peppars\u00e5sen. &#8211; \u00c5h, tar du s\u00e5 mycket konjak, \u00e5h, tar du s\u00e5 mycket <a href=\"http:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_9475.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-21562\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_9475-225x300.jpg\" alt=\"IMG_9475\" width=\"225\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_9475-225x300.jpg 225w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_9475-113x150.jpg 113w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_9475-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a>peppar\u2026 Man kan inte sn\u00e5la med vare sig det ena eller det andra n\u00e4r det g\u00e4ller att f\u00e5 till en god s\u00e5s och just alkoholen \u00e4r smakb\u00e4rare &#8211; alkoholen f\u00f6r\u00e5ngas vid tillagningen och bara den goda smaken blir kvar.<\/h3>\n<p>Den h\u00e4r s\u00e5sen blir som alltid godast n\u00e4r den g\u00f6rs p\u00e5 en riktigt bra fond. Tills\u00e4tt&nbsp;de vitpepparkornen antingen hela eller grovst\u00f6tta i mortel. Tills\u00e4tt \u00e4ven gr\u00f6npepparn &#8211; jag brukar smula dem en aning bara.<\/p>\n<p>Tills\u00e4tt Noilly Prat och l\u00e5t koka ihop i n\u00e5gra minuter innan du \u00e4ven tills\u00e4tter kalv- eller k\u00f6ttfonden.&nbsp;L\u00e5t koka ihop och reducera tills h\u00e4lften \u00e5terst\u00e5r. Tills\u00e4tt sedan gr\u00e4dden och l\u00e5t koka i ca 10 minuter till tills s\u00e5sen \u00e4r tjock och simmid. En bra s\u00e5s reder sig sj\u00e4lv heter det och jag f\u00f6rs\u00f6ker alltid undvika att reda mina s\u00e5ser med mj\u00f6l eller annat. (Det enda undantaget \u00e4r b\u00e9chamels\u00e5s.) Tills\u00e4tt konjaken och koka upp igen, l\u00e5t puttre lite. Smaka av s\u00e5 att s\u00e4ltan och pepparstyrkan \u00e4r bra. Soja \u00e4r bra f\u00f6r fin s\u00e4lta.
