Receptet utg\u00e5r fr\u00e5n ett recept i Anna Bergst\u00f6ms utm\u00e4rkta kokbok. Soppan f\u00e5r h\u00e4rlig smak av apelsinskal- och saft, vitt vin, f\u00e4nk\u00e5lsfr\u00f6n och f\u00e4rsk f\u00e4nk\u00e5l och saffran. Vid vardagliga tillf\u00e4llen tar jag fryst fisk fr\u00e5n n\u00e4rmsta aff\u00e4r, och vid festligare tillf\u00e4llen g\u00e5r jag till fiskaff\u00e4ren eller hallen och k\u00f6per f\u00e4rska h\u00e4rliga fiskar och g\u00e4rna r\u00e4kor och kanske musslor. A\u00efoli \u00e4r gott att servera till. H\u00e4r har jag dessutom bakat \u00f6rtsaltiga minibaguetter p\u00e5 dinkelmj\u00f6l till.<\/h3>\n<h4><em>Du beh\u00f6ver till ca 4 personer:<\/em><a href=\"http:\/\/files.katinkaskitchen.com\/2013\/03\/IMG_0202.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-16486\" src=\"http:\/\/files.katinkaskitchen.com\/2013\/03\/IMG_0202-300x225.jpg\" alt=\"IMG_0202\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2013\/03\/IMG_0202-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2013\/03\/IMG_0202-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2013\/03\/IMG_0202.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/h4>\n<p>1 gul l\u00f6k, skalad och skuren i skivor<\/p>\n<p>1 purjol\u00f6k, tv\u00e4ttad och skuren i skivor eller strimlor<\/p>\n<p>1-2 f\u00e4nk\u00e5lsst\u00e5nd, tv\u00e4ttade och skurna i skivor<\/p>\n<p>6-8 potatisar, skalade och skurna i t\u00e4rningar<\/p>\n<p>ca 6 tomater, sk\u00e5llade och hackade alternativt 1-2 burkar hela tomater, skurna i bitar<\/p>\n<p>1 p\u00e5se saffran, g\u00e4rna mortlad med lite salt<\/p>\n<p>knappt 1 tsk f\u00e4nk\u00e5lsfr\u00f6n, krossade i mortel<\/p>\n<p>1\/2 tsk torkad mejram, k\u00f6rvel eller basilika<\/p>\n<p>peppar och salt<\/p>\n<p>ca 1 1\/2 liter fiskbuljong eller fiskfond (till de festligare tillf\u00e4llen k\u00f6per jag f\u00e4rdig fond fr\u00e5n fiskhandlaren, annars tar jag helst fond p\u00e5 flaska)<\/p>\n<p>ca 3 dl vitt vin<\/p>\n<p>sm\u00f6r och olja till stekning<\/p>\n<p>1 apelsin, det rivna skalet och sedan pressad saft fr\u00e5n \u00e5tminstone halva apelsinen &#8211; smaka dig fram!<\/p>\n<p>fisk &#8211; jag tog fryst ryggfil\u00e9 av torsk och laxfil\u00e9er tillsammans med r\u00e4kor<\/p>\n<p>g\u00e4rna f\u00e4rsk \u00f6rtkrydda till servering (p\u00e5 bilden \u00e4r det persilja)<\/p>\n<h4><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/h4>\n<p>Tag fram en gjutj\u00e4rnsgryta, sm\u00e4lt sm\u00f6ret i oljan \u00f6ver medelh\u00f6g v\u00e4rme, Fr\u00e4s l\u00f6ken, tills\u00e4tt purjol\u00f6ken, den strimlade f\u00e4nk\u00e5len och potatisen. H\u00e4ll p\u00e5 vitt vin och l\u00e5t puttra ihop innan du tills\u00e4tter fiskfonden eller -buljongen. Tills\u00e4tt \u00e4ven tomathacket, saffran, de mortlade f\u00e4nk\u00e5lsfr\u00f6na och \u00f6rtkrydda. Salta och peppra. L\u00e5t st\u00e5 och puttra i ca 30 minuter eller tills det n\u00e4rmar sig servering. Det viktiga \u00e4r att inte l\u00e4gga i fisken f\u00f6r tidigt s\u00e5 den blir \u00f6verkokt.<\/p>\n<p>Strax innan servering l\u00e4gger du i fiskbitarna och strax d\u00e4refter r\u00e4korna och musslorna om du valt det.
