L\u00e5t koka upp och ihop och l\u00e4gg i det rivna citronskalet. L\u00e5t koka p\u00e5 l\u00e5g v\u00e4rme tills sockerlagen \u00e4r tjock och simmig och citronskalen konfiterats, blivit l\u00e4tt karamelliserade. H\u00e4ll i p\u00e4ronbitarna och r\u00f6r runt.<\/p>\n<p>H\u00e4ll p\u00e4ronblandningen i en smord ugnsform, helst en s\u00e5dan utan l\u00f6stagbara kanter f\u00f6r att det inte ska rinna ut v\u00e4tska under gr\u00e4ddningen.<\/p>\n<p>Vispa \u00e4ggvitorna till styvt skum med n\u00e5gra droppar citron. Vispa f\u00f6rsiktigt i sockret lite i taget. Forts\u00e4tt vispa ett tag till tills mar\u00e4ngsmeten \u00e4r blank och fin.<\/p>\n<p>Bred mar\u00e4ngen \u00f6ver p\u00e4ronblandningen. St\u00e4ll in i ugnen som du v\u00e4rmt till 150-175 grader. Har du varmluftsugn v\u00e4ljer du den l\u00e4gre temperaturen. St\u00e4ll formen l\u00e5gt i ugnen om du har en elugn. I gasugn st\u00e4ller du den h\u00f6gt upp f\u00f6r att den inte ska bli br\u00e4nd i botten.<\/p>\n<p>L\u00e5t gr\u00e4dda i minst 30 minuter, oftast tar det ca 45 minuter, ibland l\u00e4ngre. Du kan knacka f\u00f6rsiktigt p\u00e5 mar\u00e4ngen med t.ex. en tr\u00e4sked f\u00f6r att h\u00f6ra om den \u00e4r klar. Den ska d\u00e5 k\u00e4nnas h\u00e5rd med ett &#8221;ih\u00e5ligt&#8221; l\u00e4te. Den brukar fortfarande vara mjuk l\u00e4ngst in &#8211; det blir v\u00e4ldigt gott!<\/p>\n<p>Servera ljummen eller kall med l\u00f6svispad gr\u00e4dde smaksatt med vanilj. Vaniljs\u00e5s \u00e4r ett annat gott alternativ som ocks\u00e5 passar bra till.
