Jag hade t\u00e4nkt mig lax med f\u00e4nk\u00e5l p\u00e5 n\u00e5got vis, men visste inte riktigt hur. S\u00e5 hade jag n\u00e5gra halvor v\u00e4ldigt fin mogen lime i kylen som jag ville anv\u00e4nda, och sakta gav det sig &#8211; en ny favorit-laxr\u00e4tt! F\u00e4nk\u00e5len steks med l\u00f6k p\u00e5 l\u00e5g v\u00e4rme, kryddas med ros\u00e9peppar och lime eller citron och f\u00e5r en liten skv\u00e4tt smakh\u00f6jande god vin\u00e4ger p\u00e5 slutet. F\u00e4nk\u00e5lssalladen f\u00e5r en angen\u00e4m karamelliserad l\u00e4tt s\u00f6t-syrlig smak. St\u00e4ll \u00e5t sidan medan du f\u00f6rbereder allt annat. Sedan g\u00e5r laxen fort att steka i ugn medan du steker f\u00e4nk\u00e5lssalladen.<\/p>\n<p>Fr\u00e4s f\u00f6rst l\u00f6ken ett tag p\u00e5 ganska l\u00e5g v\u00e4rme i n\u00e5gra msk olivolja. R\u00f6r runt ganska ofta s\u00e5 den inte br\u00e4nns. Salta och peppra g\u00e4rna med blandpeppar (vit- gr\u00f6n- ros\u00e9- och svartpeppar) eller bara ros\u00e9peppar. Nu kan du st\u00e4lla in laxen i ugnen som du f\u00f6rv\u00e4rmt till 125-250 grader. Tills\u00e4tt f\u00e4nk\u00e5len och forts\u00e4tt steka. L\u00e4gg eventuellt p\u00e5 ett lock s\u00e5 f\u00e4nk\u00e5len blir mjuk.<\/p>\n<p>Koka socker\u00e4rtorna i saltat vatten, h\u00e4ll av och l\u00e4gg i en sm\u00f6rklick.<\/p>\n<p>Strax innan servering tills\u00e4tter du 1-2 tsk vin\u00e4ger, saltar och kryddar med ros\u00e9peppar. Tills\u00e4tt ocks\u00e5 h\u00e4lften av den hackade gr\u00e4sl\u00f6ken och en del av f\u00e4nk\u00e5lsvipporna om du har gott om dem &#8211; men se till att du har kvar till dekoration vid servering. H\u00e4ll p\u00e5 lite mer olivolja.<\/p>\n<p>L\u00e4gg upp den varma f\u00e4nk\u00e5lssalladen p\u00e5 fat, l\u00e4gg laxen bredvid och sist socker\u00e4rtorna. Dekorera f\u00e4nk\u00e5lssalladen med gr\u00e4sl\u00f6k och laxen med f\u00e4nk\u00e5lsvipporna.
