Den har underbara smaker av f\u00e4nk\u00e5len tillsammans med sherryvin\u00e4ger och ros\u00e9peppar. Jag serverar den till snabbt ugnsstekt lax, till lite mer raffinerad l\u00e4ttrimmad l\u00e5ngsambakad torskrygg eller till k\u00f6tt. H\u00e4r fick den vara ett tillbeh\u00f6r till grillade lammkotletter.<\/h3>\n<h3>F\u00e4nk\u00e5lssalladen kan serveras varm, ljummen eller kall. Den f\u00e5r sin fina smak av sherryvin\u00e4ger, s\u00e5 det passade extra bra att laga den h\u00e4r i sydspanien. F\u00f6rs\u00f6k f\u00e5 tag p\u00e5 en god sherryvin\u00e4ger, det brukar finnas p\u00e5 v\u00e4lsorterade mataff\u00e4rer numera. V\u00e4lj annars en s\u00e4rdeles god vitvinsvin\u00e4ger. En god olivolja \u00e4r ocks\u00e5 viktigt f\u00f6r den r\u00e4tta smaken. N\u00e4r l\u00f6ken sjunkit ihop och blivit blank tills\u00e4tter du f\u00e4nk\u00e5len. L\u00e5t steka, r\u00f6r om d\u00e5 och d\u00e5. Krydda med peppar, salt och ros\u00e9peppar. L\u00e5t steka tills f\u00e4nk\u00e5len mjuknat. H\u00e4ll p\u00e5 en skv\u00e4tt vitt vin och l\u00e5t koka in. Tills\u00e4tt g\u00e4rna en sked sm\u00f6r till, krydda med n\u00e5gon tsk god sherryvin\u00e4ger. Tills\u00e4tt \u00e4ven en del av f\u00e4nk\u00e5lsvipporna om du har m\u00e5nga.<\/p>\n<p>L\u00e4gg upp p\u00e5 serveringsfat och krydda med lite mer ros\u00e9peppar, med de gr\u00f6na dekorativa f\u00e4nk\u00e5lsvipporna och ev. med lite gr\u00e4sl\u00f6k.
