Jag gjorde den till Picards utm\u00e4rkta vaktlar. D\u00e5 tog jag lite av stekspadet som samlas i botten av ugnsformen. Ta g\u00e4rna det stekspad du har fr\u00e5n ugnsform eller stekpanna f\u00f6r att ge extra smak. Gr\u00e4dde och konjak \u00e4r det som ger s\u00e5sen sin underbara smak. Smula ner k\u00f6ttbuljongen eller h\u00e4ll i fonden. L\u00e5t koka ihop s\u00e5 att buljongen l\u00f6ser sig och det puttrar ihop lite. Tills\u00e4tt gr\u00e4dden, sojan, kelpamaren och pepparn samt stekspadet.<\/p>\n<p>L\u00e5t s\u00e5sen puttra ganska friskt utan att den kokar \u00f6ver. Det h\u00e4r g\u00f6r man f\u00f6r att den ska g\u00e5 ihop och bli homogen och samtidigt tjockna utan att man beh\u00f6ver reda den. Smaken f\u00f6rb\u00e4ttras ocks\u00e5 p\u00e5 k\u00f6pet.
