Ankleverp\u00e2t\u00e9 finns att k\u00f6pa i varje enkel snabbk\u00f6psaff\u00e4r f\u00f6r en ganska liten penning. Bunkra g\u00e4rna upp, de brukar h\u00e5lla l\u00e4nge och \u00e4r dessutom supertrevliga som present n\u00e4r man g\u00e5r p\u00e5 middag.<\/h3>\n<h3>Fast det kan vara v\u00e4rt att kolla om dina g\u00e4ster \u00e4r lika f\u00f6rtjusta i anklevern. En g\u00e5ng gjorde jag mig \u00e5maket att leta r\u00e4tt p\u00e5 anklever inf\u00f6r en Valborgsmiddag d\u00e4r jag var p\u00e5 landet i Sk\u00e5ne. Det var inte helt l\u00e4tt och i sanning inte billigt. N\u00e4r g\u00e4sterna v\u00e4l kom visade det sig att de flesta inte ens tyckte om denna delikatess, som v\u00e4l inte \u00e4r helt politiskt korrekt men ack s\u00e5 god, tycker jag. S\u00e4rskilt n\u00e4r man som h\u00e4r serverar den med en balsamicoreduktion och ros\u00e9peppar som funkar v\u00e4ldigt bra till i smak &#8211; och det blir vackert ocks\u00e5. F\u00f6rr stod jag och reducerade balsamvin\u00e4ger till en reduktion och vill man ha den riktigt naturligt god utan socker kan man g\u00f6ra det, men nu finns det praktisk f\u00e4rdig reduktion att k\u00f6pa.<\/h3>\n<h4><em>Du beh\u00f6ver:<\/em><\/h4>\n<p>rostade skivor av baguette eller f\u00e4rdiga crostinis (ta s\u00e5 m\u00e5nga som du tror ni \u00e4ter, m\u00e4ngden beror ju ocks\u00e5 p\u00e5 om ni \u00e4ven har ett annat tilltugg)<\/p>\n<p>anklever eller g\u00e5slever (jag brukar oftast anv\u00e4nda den p\u00e5 burk, men f\u00e4rsk \u00e4r sj\u00e4lvklart ocks\u00e5 mycket gott)<\/p>\n<p>Balsamicoreduktion<\/p>\n<p>ros\u00e9peppar<\/p>\n<p>flingsalt<\/p>\n<h4><em>G\u00f6r s\u00e5 h\u00e4r:<\/em><\/h4>\n<p>L\u00e4gg de svalnade rostade baguetteskivorna eller crostinisarna (eller vad du nu valt att g\u00f6ra dina snittar p\u00e5) p\u00e5 bricka eller fat.<\/p>\n<p>L\u00e4gg en bit anklever p\u00e5 varje br\u00f6dskiva.<\/p>\n<p>Ringla balsamicoreduktion \u00f6ver det hela s\u00e5 att det finns lite balsamico p\u00e5 varje snitt eller kanap\u00e9. Smula \u00f6ver ros\u00e9peppar och flingsalt.<\/p>\n<p>Servera direkt, helst med champagne eller ett gott vitt vin. Faktum \u00e4r att just ank- eller g\u00e5slever passar mycket bra ihop med ett s\u00f6tt eller halvs\u00f6tt vin &#8211; v\u00e4rt att testa. Fransm\u00e4nnen dricker g\u00e4rna Sauterners eller en Graves eller t.ex.
