Blanda sm\u00f6ret med dragon. Lyft f\u00f6rsiktigt skinnet \u00f6ver br\u00f6stet och tryck in sm\u00f6ret och gnid ut det under skinnet i ett j\u00e4mnt lager. Detta g\u00f6r att kycklingen blir extra saftig och god. Gnid d\u00e4refter in hela kycklingen med olivolja, salta och peppra ganska rikligt. Nu \u00e4r det dags att fylla kycklingen<br \/>\nmed citron. Dela citronen i bitar ochstoppa in i kycklingen. Den ger smak och saftighet \u00e5t k\u00f6ttet inifr\u00e5n. St\u00e4ll in kycklingen i ugnen p\u00e5 ca 170 grader. Den brukar ta ca en timme. Du m\u00e4rker n\u00e4r den \u00e4r klar genom att sticka i den och se om saften \u00e4r klar. \u00c4r saften fortfarande rosa m\u00e5ste den stekas tills saften \u00e4r klar.<\/p>\n<p>Har du valt att anv\u00e4nda kycklingfil\u00e9er g\u00f6r du likadant ifall de har skinn. I annat fall kryddar du bara med dragon, peppar och salt och steker s\u00e5 de f\u00e5r vacker stekyta, varefter du l\u00e5ter dem steka klart i ugnen.<\/p>\n<p>Forts\u00e4tt med att g\u00f6ra i ordning rotfrukterna. R\u00f6r runt. H\u00e4ll upp p\u00e5 en ugnspl\u00e5t. St\u00e4ll \u00e5t sidan tills det \u00e4r ca 30 minuter kvar p\u00e5 kycklingens stektid. Under tiden g\u00f6r du s\u00e5sen:<\/p>\n<p>Blanda socker och vin\u00e4ger i en tjockbottnad kastrull.&nbsp;L\u00e5t koka upp p\u00e5 medelh\u00f6g v\u00e4rme under omr\u00f6rning. L\u00e5t puttra ihop s\u00e5 det blir en sirapsliknande karamell. L\u00e4gg i citronskalen och l\u00e5t puttra lite innan du f\u00f6rsikigt tills\u00e4tter lite av buljongen s\u00e5 att karamellen l\u00f6ser sig innan du h\u00e4ller i resten av buljongen. Tills\u00e4tt \u00e4ven pepparkornen. L\u00e5t puttra p\u00e5 l\u00e5g v\u00e4rme medan du lagar den mat du ska servera din goda s\u00e5s till.<\/p>\n<p>Ett tag innan servering tills\u00e4tter du citronsaften. Smaka av &#8211; kanske beh\u00f6ver du mer citronsaft eller mer buljong, mer salt? Precis innan servering vispar\/r\u00f6r du i en klick sm\u00f6r. H\u00e4ll s\u00e5sen i en s\u00e5ssnipa som du f\u00f6rv\u00e4rmt med hett vatten s\u00e5 att s\u00e5sen h\u00e5ller sig varm l\u00e4nge.
