Den \u00e4r i sin ursprungliga tappning fylld med blancherat sidfl\u00e4sk, men g\u00f6rs ofta fylld med skinka och ost &#8211; och \u00e4ggstanningen. Enkelt och gott. Den passar lika bra till middag, lunch, p\u00e5 en buff\u00e9 eller till picknick. Tills\u00e4tt vattnet och blanda snabbt ihop degen. Forma degen till en fast boll. Pudra l\u00e4tt med mj\u00f6l och kavla till platt rundel som \u00e4r n\u00e5got st\u00f6rre \u00e4n formen den skall t\u00e4cka. Lyft \u00f6ver degplattan och tryck ut den i formen. Var noga med att den g\u00e5r upp p\u00e5 och lite \u00f6ver kanterna. F\u00f6rgr\u00e4dda pajskalet i ca tio minuter. Tag ut och nagga botten s\u00e5 den inte bubblar upp. Gr\u00e4dda n\u00e5gra minuter till. N\u00e4r degen b\u00f6rjar ta f\u00e4rg och b\u00f6rjar dra ihop sig lite \u00e4r pajskalets f\u00f6rgr\u00e4ddning klar.<\/p>\n<p>Medan pajskalet vilar och f\u00f6rgr\u00e4ddas g\u00f6r du i ordning fyllningen. Fr\u00e4s l\u00f6ken i sm\u00f6ret p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir mjuk och s\u00f6t utan att ta f\u00e4rg. Tills\u00e4tt skinkbitarna och h\u00f6j v\u00e4rmen. L\u00e5t fr\u00e4sa ett litet tag, krydda med \u00f6rtkryddorna. Dra pannan fr\u00e5n v\u00e4rmen. Vispa upp \u00e4ggen med gr\u00e4ddmj\u00f6lken och krydda med muskot, peppar och ev. salt.<\/p>\n<p>Tag ut det f\u00f6rgr\u00e4ddade pajskalet, l\u00e5t det svalna n\u00e5got och l\u00e4gg i skinkg\u00e4rset, d\u00e4refter osten och h\u00e4ll den uppvispade kryddade \u00e4ggstanningen \u00f6ver.<\/p>\n<p>St\u00e4ll tillbaka i ugnen p\u00e5 175 grader i ca 30-40 minuter, tills fyllningen stelnat.
