Skapare f\u00f6rresten, jo, det f\u00e5r man v\u00e4l s\u00e4ga n\u00e4r man tar en traditionell klassiker som Vitello Tonnato ett steg l\u00e4ngre. Vitello Tonnato \u00e4r en r\u00e4tt jag g\u00e4rna g\u00f6r vid v\u00e5rens och f\u00f6rsommarens buff\u00e9er och fester. Men Lotta har dekonstruerat den, precis som jag gillar att g\u00f6ra i bland, fast med fortsatt uppbyggningsfas efter dekonstruktionen s\u00e5 att det blev en pastar\u00e4tt. Jag var tvungen att prova!<\/h3>\n<h3>Receptet publicerades i hennes senaste bok, den mycket l\u00e4sv\u00e4rda Tio Lektioner i Matglagning (utgiven av Wahlstr\u00f6m &amp; Widstrand 2013). Jag str\u00e4ckl\u00e4ste den fr\u00e5n p\u00e4rm till p\u00e4rm, och fnissade mest hela tiden, med n\u00e5gra rej\u00e4la skratt h\u00e4r och d\u00e4r. Det \u00e4r en ovanlig men mycket bra kokbok. Jag hade turen att finna suver\u00e4na saltinlagda kaprisar som \u00e4r v\u00e4l v\u00e4rda m\u00f6dan och kostnaden att leta efter dem och k\u00f6pa dem i st\u00e4llet f\u00f6r vanlig kapris i lag. N\u00e4r vitl\u00f6ken tagit aningen f\u00e4rg, tills\u00e4tt kalvf\u00e4rs och stek igenom. Hacka under tiden sardellfil\u00e9erna mycket fint. Tills\u00e4tt den fr\u00e4sande f\u00e4rsen och sl\u00e5 p\u00e5 tomat och saften fr\u00e5n den pressade citronen.
