I kylen hittade jag ett paket r\u00f6kt lax i skivor. Jag hade just skaffat f\u00e4rsk purjol\u00f6k, och t\u00e4nkte att de d\u00e4r skulle ju passa ihop. Det blev en kr\u00e4mig god s\u00e5s som smaksattes med dragon, basilika och sherry, eftersom matlagningsvinet var slut. Servera med den pasta du vill. Tills\u00e4tt purjol\u00f6ken och l\u00e5t den bli mjuk men absolut inte ta f\u00e4rg eller bli frasig &#8211; den f\u00e5r d\u00e5 l\u00e4tt en bitter ton i st\u00e4llet f\u00f6r den mj\u00e4lla s\u00f6ta smak som framtr\u00e4der n\u00e4r den mjuknar i sm\u00f6r. Spara g\u00e4rna lite av den gr\u00f6na delen av purjol\u00f6ken som du finstrimlar och str\u00f6r \u00f6ver vid servering.<\/p>\n<p>H\u00e4ll p\u00e5 gr\u00e4dden, buljongen och vinet eller sherryn. Krydda med \u00f6rterna och peppar. L\u00e4gg i den r\u00f6kta laxen, smaka av. Under tiden som s\u00e5sen kokar ihop kokar du pastan al dente &#8211; s\u00e5 den fortfarande har en lite h\u00e5rd k\u00e4rna och inte blir alltf\u00f6r sladdrig och kladdig.<\/p>\n<p>H\u00e4ll av pastavattnet och h\u00e4ll pastan direkt i s\u00e5sen, r\u00f6r runt och l\u00e4gg upp p\u00e5 fat och servera direkt.
