Upprinnelsen var att jag hade l\u00e4st Lotta Lundgrens nya bok Tio Lektioner i Matlagning som jag f\u00e5tt i julklapp. Det \u00e4r en mycket bra och inspirerande bok som bland annat inspirerade mig att vidareutveckla indiska grytor jag gjort tidigare till denna s\u00f6tsyrliga gr\u00f6nsaksgryta p\u00e5 s\u00f6tpotatis, aubergine, zucchini och torkad aprikos med smak av lime, <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-27792\" src=\"http:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_10bc-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_10bc-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_10bc-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_10bc-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_10bc.jpeg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>citron, apelsin och diverse exotiska kryddor inklusive saffran.<\/h3>\n<h3>Till serverade jag majskycklingbr\u00f6st som kryddats med en sp\u00e4nnande kryddblandning jag gjort sj\u00e4lv p\u00e5 stj\u00e4rnanis, kryddpeppar, svartpeppar, kanel, kardemumma, lite<br \/>\nanchochili och salt. Till serverade jag &nbsp;som en eftergift till de hungriga m\u00e4nnen i familjen ugnsrostad potatis i halvor, men det kanske passar \u00e4nnu b\u00e4ttre med ris, alternativt quinoa f\u00f6r extra blir rumstempererade under tiden.<\/p>\n<p>Stek l\u00f6k och vitl\u00f6k mjuk i oljan. Tills\u00e4tt f\u00f6rst ingef\u00e4ra och chili, l\u00e5t steka ett tag innan du tills\u00e4tter alla kryddor utom den f\u00e4rska koriandern. Om saffranet har l\u00e5nga str\u00e5n \u00e4r det b\u00e4st att mortla dem med lite salt innan du tills\u00e4tter det. Du kan beh\u00f6va lite extra olja h\u00e4r. L\u00e4gg i s\u00f6tpotatisen, auberginen och zucchinin och l\u00e5t steka med ett litet tag innan du l\u00e4gger i aprikoserna och h\u00e4ller p\u00e5 buljongen samt apelsin- lime- och citronjuice samt skal. L\u00e5t puttra s\u00e5 att det blir mjukt och en del av v\u00e4tskan reduceras bort. Under tiden tar du dig an kycklingen och potatis eller det tillbeh\u00f6r du valt.<\/p>\n<p>Mortla kryddorna till den h\u00e4rligt aromatiska kryddblandningen till kycklingen tillsammans med saltet. Gnid in kycklingfil\u00e9erna med kryddblandningen. H\u00e4ll lite olja p\u00e5 och l\u00e4gg kycklingfil\u00e9erna i stekpanna p\u00e5 ganska h\u00f6g v\u00e4rme. L\u00e5t dem steka s\u00e5 de tar lagom f\u00e4rg p\u00e5 varje sida. L\u00e4gg dem sedan i en ugnsfast form som du st\u00e4ller in i ugnen, antingen samtidigt som potatishalvorna eller f\u00f6r sig sj\u00e4lva och d\u00e5 p\u00e5 lite l\u00e4gre temperatur, s\u00e5 de blir saftiga och fina. Kycklingen \u00e4r klar n\u00e4r saften som kommer ur n\u00e4r du sticker i den \u00e4r helt klar, inte rosa.<\/p>\n<p>Koka din couscous eller bulgur, om du vill servera det till.<\/p>\n<p>Precis innan servering str\u00f6r du rikligt med hackad f\u00e4rsk koriander \u00f6ver s\u00f6tpotatisgrytan.
