Man k\u00f6per extra mycket lammstek och st\u00e4lller sig sedan och sk\u00e4r bort alla hinnor och senor s\u00e5 bara bitar av rent fint m\u00f6rt k\u00f6tt finns kvar. Det saltas och peppras och steks p\u00e5 v\u00e4ldigt h\u00f6g v\u00e4rme i grillpanna ett kort tag f\u00f6r att d\u00e4refter l\u00e5ngsamt stekas klart i ugn p\u00e5 helst 70 grader. Resultatet blir perfekt m\u00f6rt, rosa supergott k\u00f6tt att servera med de tillbeh\u00f6r till valt. Det h\u00e4r \u00e4r ett fantastiskt s\u00e4tt att tillaga vilken stek som helst. L\u00e4gg i k\u00f6ttbitar och stek dem (utan fett) hastigt runt om s\u00e5 att de f\u00e5r fin f\u00e4rg med vackra r\u00e4nder, men inte mer.&nbsp;Eftersom v\u00e4rmen ska vara riktigt h\u00f6g \u00e4r det inte heller n\u00e5gon bra id\u00e9 att steka i sm\u00f6r.&nbsp;L\u00e4gg bitarna d\u00e4refter i en ugnsfast form. Har du ingen grillpanna anv\u00e4nder du helst en gjutj\u00e4rnspanna, och d\u00e5 kan du beh\u00f6va lite olja f\u00f6r att de inte ska fastna.<\/p>\n<p>Du kan f\u00f6rbereda k\u00f6ttet s\u00e5 h\u00e4r l\u00e5ngt, och st\u00e4lla det \u00e5t sidan tills det \u00e4r dags att steka det i ugnen inf\u00f6r serveringen. Har du inte s\u00e5 mycket tid h\u00f6jer du temperaturen men b\u00f6rjar det g\u00e5 uppemot 150 grader blir k\u00f6ttet inte lika m\u00f6rt och saftigt eller vackert j\u00e4mnt rosa, \u00e4ven om stekningen g\u00e5r fortare. N\u00e4r k\u00f6ttet n\u00e5tt en innertemperatur av 57 grader tycker jag det \u00e4r perkfekt. Tag ut k\u00f6ttet och l\u00e5t det vila ett tag innan du sk\u00e4r upp det i trekantsliknande bitar, som du ser p\u00e5 bilden.<\/p>\n<p>Medan k\u00f6ttet steker tar du dig an de tillbeh\u00f6r du valt.
