Koka blomk\u00e5len tillsammans med schalottenl\u00f6ken i vatten s\u00e5 det t\u00e4cker. N\u00e4r blomk\u00e5len \u00e4r helt mjuk h\u00e4ller du av vattnet men sparar lite att ha och sp\u00e4da med. Mixa med mixerstav tillsammans med sm\u00f6r och gr\u00e4dde. Det \u00e4r sv\u00e5rt att ange exakta m\u00e4ngder eftersom beror p\u00e5 hur mycket v\u00e4tska det \u00e4r i blomk\u00e5len. Jag tycker om n\u00e4r pur\u00e9n \u00e4r ganska l\u00f6s och har fin sm\u00f6rsmak. Smaka av med tryffelolja och tryffelsalt samt peppar.
