D\u00e5 menar jag inte mat fr\u00e5n en indisk restaurang i Sverige, eftersom jag inte tycker de har s\u00e5 mycket gemensamt med den goda indiska mat jag \u00e4tit i New Delhi under mina flygv\u00e4rdinnedagar. Aubergine passar v\u00e4ldigt bra till just fisk tycker jag och den h\u00e4r curryn blev mycket v\u00e4lbalanserad och uppskattad. Ingredienslistan \u00e4r l\u00e5ng, men l\u00e5t dig inte avskr\u00e4ckas &#8211; det \u00e4r l\u00e4ttare \u00e4n man kan tro och v\u00e4l v\u00e4rt insatsen!<\/h3>\n<p>Indisk mat \u00e4r s\u00e4llan fotog\u00e9nique, men den h\u00e4r r\u00e4tten \u00e4r garanterat god! Vintips? En tysk Riesling \u00e4r aldrig fel;) &#8211; s\u00e4rskilt till s\u00e5dana h\u00e4r komplexa smaker. Tills\u00e4tt s\u00f6tpotatisen, gurkmejan och paprikapulvret samt spiskummin och stek ett tag till. Tills\u00e4tt sedan \u00e4ven auberginen, r\u00f6r runt, h\u00e4ll p\u00e5 kokosmj\u00f6lken och tills\u00e4tt resten av kryddorna, sockret samt buljongen. Pressa i saft fr\u00e5n den ena limefrukten, l\u00e4gg g\u00e4rna i den ena halvan att koka med. Tv\u00e4tta skalet noga innan och anv\u00e4nd helst ekologisk lime.<\/p>\n<p>Under tiden som curryn puttrar l\u00e4gger du upp dina fiskfil\u00e9er och kryddar dem med gurkmeja, peppar, salt och mangocurryblandingen. N\u00e4r s\u00e5sen kokt f\u00e4rdigt och du smakat av s\u00e5 att smakerna \u00e4r v\u00e4l balanserade och pressat i mer lime, smakat av med kryddor och salt och k\u00e4nner dig n\u00f6jd med s\u00e5v\u00e4l smak som konsistens l\u00e4gger du fiskfil\u00e9erna h\u00f6gst upp i s\u00e5sen och slevar lite s\u00e5s \u00f6ver varje fiskbit. L\u00e5t fisken sjuda i ca 5 minuter s\u00e5 den precis blir genomkokt utan att koka s\u00f6nder eller blir \u00f6verkokt.
