Italienarna \u00e4r ju m\u00e4stare p\u00e5 att h\u00e5lla det enkelt men vidunderligt gott. H\u00e4r har jag gjort en frittata med svensk-franska f\u00f6rtecken och l\u00e4tt v\u00e5rk\u00e4nsla. Den har fyllts med \u00f6verbliven kokt potatis, ch\u00e8vre, r\u00f6kt lax och toppats med strimlad salladsl\u00f6k. Jag tog blandad peppar, lite chili explosion, \u00f6rtsalt och blandade \u00f6rter.<\/p>\n<p>Vispa f\u00f6rsiktigt ihop \u00e4ggen med vattnet i en bunke. \u00c4ggen ska g\u00e5 ihop men inte sl\u00e5s s\u00f6nder, eftersom det \u00e4r omelett och inte \u00e4ggr\u00f6ra vi g\u00f6r:) H\u00e4ll \u00e4ggvispet \u00f6ver potatisen i stekpannan, dra genast ner v\u00e4rmen till l\u00e5g. Lyft \u00e4ggstanningen f\u00f6rsiktigt om och om igen runt om s\u00e5 att l\u00f6st \u00e4ggvisp rinner ner i pannan och kan stelna. Efter ett tag l\u00e4gger du p\u00e5 ett lock och l\u00e5ter det steka s\u00e5 det blir varmt och stelnar, men utan att ta f\u00e4rg och bli br\u00e4nt i botten. Smula getosten (ch\u00e8vren) \u00f6ver, krydda med peppar och \u00f6rter. N\u00e4r din omelett\/frittata stelnat l\u00e4gger du laxskivorna \u00f6ver och str\u00f6r salladsl\u00f6ken \u00f6ver det hela.
