Fast det \u00e4r ju inte s\u00e5 l\u00e4tt att hitta scaloppine i Sverige, s\u00e5 jag k\u00f6pte n\u00e5got som hette kalvrygg. Det s\u00e5g bra ut i f\u00f6rpackningen men vi uppt\u00e4ckte att det var mindre l\u00e4mpat f\u00f6r just scaloppine eftersom det var sv\u00e5rt att f\u00e5 ut hela lite st\u00f6rre skivor. Maken sprang iv\u00e4g till en ordentlig k\u00f6tthandlare och middagen blev r\u00e4ddad.<\/h3>\n<h3>Ryggbiten anv\u00e4nde jag i st\u00e4llet till den h\u00e4r grytan som blev v\u00e5r utm\u00e4rkta s\u00f6ndagmiddag. Min tanke var att g\u00f6ra en slags kalvgryta marengo, men jag <a href=\"http:\/\/files.katinkaskitchen.com\/2014\/08\/2367228.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-20754\" src=\"http:\/\/files.katinkaskitchen.com\/2014\/08\/2367228-300x225.jpg\" alt=\"2367228\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2014\/08\/2367228-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2014\/08\/2367228-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2014\/08\/2367228.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>saknade en del ingredienser och improviserade i st\u00e4llet fram den h\u00e4r grytan som blev riktigt lyckad. Tills\u00e4tt \u00e4ven \u00f6rtkryddorna och de hela pepparkornen samt lagerblad. R\u00f6r om d\u00e5 och d\u00e5.<\/p>\n<p>Under tiden steker du k\u00f6ttet i olivolja i en stekpanna p\u00e5 ganska h\u00f6g temperatur. Krydda k\u00f6ttet med paprikapulver, vit- och svartpeppar samt salt. Pudra med lite mj\u00f6l. Stek s\u00e5 k\u00f6ttet f\u00e5r fin f\u00e4rg men inte blir genomstekt. Det ska koka i grytan i st\u00e4llet. L\u00e4gg det stekta k\u00f6ttet i grytan allt eftersom.<\/p>\n<p>H\u00e4ll vinet \u00f6ver l\u00f6ken. L\u00e5t puttra ihop p\u00e5 ganska h\u00f6g v\u00e4rme s\u00e5 vinet reduceras n\u00e5got. Tills\u00e4tt tomat, tomatpur\u00e9 och buljong eller fond. Tills\u00e4tt \u00e4ven kelpamare. L\u00e4gg p\u00e5 ett lock och l\u00e5t grytan puttra i ca 30 minuter. Smaka av och se till att k\u00f6ttet \u00e4r bra kokt.
