Den ser ju ut som tillplattade persikor, doftar mer aromatiskt &#8211; ungef\u00e4r som vita persikor, och \u00e4r v\u00e4ldigt goda med en ganska tropisk smak som liknar guava tycker jag, med en liten not av smultron och p\u00e4ron. Hur som helst kom den p\u00e5 tur i v\u00e5rt experimenterande med sorbeter. Blanda socker och vatten i en tjockbottnad kastrull. N\u00e4r sockerlagen b\u00f6rjar koka l\u00e5ter du den sm\u00e5koka i n\u00e5gra minuter medan du r\u00f6r d\u00e5 och d\u00e5. Den ska bli lite simmig men inte f\u00f6r tjock. Ta av den fr\u00e5n v\u00e4rmen och l\u00e5t den svalna. Har du br\u00e5ttom st\u00e4ller du kastrullen i kallt vattenbad. Du kan g\u00f6ra sockerlagen i f\u00f6rv\u00e4g och st\u00e4lla den i kylen tills det \u00e4r dags att g\u00f6ra din sorbet. Jag brukar ibland koka sockerlagen p\u00e5 morgonen s\u00e5 \u00e4r den riktigt kall n\u00e4r jag p\u00e5 kv\u00e4llen ska g\u00f6ra sorbeten.<\/p>\n<p>Skala paraguayosarna f\u00f6rsiktigt, dela dem och sk\u00e4r loss fruktk\u00f6ttet i bitar och l\u00e4gg det i en mixer. H\u00e4ll p\u00e5 sockerlagen. Om du \u00e4r os\u00e4ker p\u00e5 proportionerna och inte vill riskera att sorbeten blir f\u00f6r s\u00f6t g\u00f6r du b\u00e4st i att bara ta en del av sockerlagen till en b\u00f6rjan. Hit kan du f\u00f6rbereda och st\u00e4lla blandningen i kylen tills du ska h\u00e4lla den i glassmaskinen. N\u00e4r du v\u00e4l h\u00e4llt den i glassmaskinen tar det ca 30 minuter f\u00f6r den att frysa. Servera den direkt, g\u00e4rna i nedkylda sk\u00e5lar s\u00e5 att den inte sm\u00e4lter. Eller st\u00e4ll den i frysen i en riktigt ren f\u00f6rpackning med lock (s\u00e5 den inte tar smak av andra r\u00e4tter som kanske varit i plastl\u00e5dan tidigare).
