N\u00e4r den b\u00f6rjat koka l\u00e5ter du den sm\u00e5bubbla n\u00e5gra minuter och r\u00f6r d\u00e5 och d\u00e5. Den ska bli lite simmig i konsistensen. St\u00e4ll den att svalna, har du br\u00e5ttom st\u00e4ller du kastrullen i kallt vattenbad. Du kan f\u00f6rvara sockerlagen i kylen i n\u00e5gra dagar om du vill g\u00f6ra den i f\u00f6rv\u00e4g. L\u00e4gg fruktk\u00f6ttet i en mixer och h\u00e4ll p\u00e5 sockerlag. Tills\u00e4tt \u00e4ven lite citron, dels f\u00f6r syran men \u00e4ven f\u00f6r att f\u00f6rhindra oxidation och missf\u00e4rgning av fruktk\u00f6ttet. Mixa blandningen tills den \u00e4r helt sl\u00e4t och lite skummig. Hit kan du f\u00f6rbereda och st\u00e4lla blandningen i kylen. N\u00e4r det \u00e4r dags h\u00e4ller du blandningen i glassmaskinen. Den brukar frysa p\u00e5 ca 30 minuter och \u00e4r klar n\u00e4r hela sorbeten \u00e5ker runt, runt kring &#8221;sin egen axel&#8221;.
