H\u00e4r \u00e4r en variant p\u00e5 den underbara rotfrukten palsternacka. Det g\u00e5r \u00e4ven att g\u00f6ra den p\u00e5 persiljerot som \u00e4r snarlik i s\u00e5v\u00e4l utseende som smak. Som vanligt gillar jag att ha soppan ren, utan redning eller gr\u00e4dde men g\u00e4rna med en skv\u00e4tt vitt vin f\u00f6r att h\u00f6ja smaken. Den som vill s\u00e4tter till en skv\u00e4tt gr\u00e4dde ett litet tag innan servering.&nbsp;<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r ca 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>800 gram palsternacka, skalad och skuren i bitar<\/p>\n<p>2 schalottenl\u00f6kar, skalade och hackade<\/p>\n<p>sm\u00f6r och\/eller olivolja till stekning<\/p>\n<p>gr\u00f6nsaksbuljong av god kvalitet, helst utan glutamat<\/p>\n<p>salt och peppar<\/p>\n<p>1\/2 &#8211; 1 dl vitt vin<\/p>\n<p>ev. 1\/2 &#8211; 1 dl gr\u00e4dde<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>B\u00f6rja med att steka schalottenl\u00f6ken p\u00e5 meddell\u00e5g v\u00e4rme s\u00e5 den inte tar f\u00e4rg men blir mjuk. Tills\u00e4tt vinet och l\u00e5t puttra ihop s\u00e5 vinet reduceras n\u00e5got. Tills\u00e4tt palsternacksbitarna och buljongen. L\u00e5t koka ca 20-30 minuter tills palsternackan \u00e4r mjuk.
