Jag hade f\u00e5tt underbar hjortf\u00e4rs fr\u00e5n goda v\u00e4nner efter jakt och funderade p\u00e5 hur jag skulle g\u00f6ra n\u00e4r jag hittade ett recept p\u00e5 \u00e4lgf\u00e4rsbiffar. Jag serverade hjortf\u00e4rsbiffarna lindade med bacon, trattkantarells\u00e5s, rostade rotfrukter och klyftpotatis. Sonen och hans kompis tyckte det blev ovanligt goda hamburgare den l\u00f6rdagkv\u00e4llen:) <\/strong><\/p>\n<p><strong><em>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/em><\/strong><\/p>\n<p><em>Till viltf\u00e4rsbiffarna:&nbsp;<\/em><\/p>\n<p>600-800 gram viltf\u00e4rs, t.ex. hjort- r\u00e5djur- eller \u00e4lgf\u00e4rs<a href=\"http:\/\/files.katinkaskitchen.com\/2014\/12\/2447932.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-21148\" src=\"http:\/\/files.katinkaskitchen.com\/2014\/12\/2447932-300x225.jpg\" alt=\"2447932\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2014\/12\/2447932-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2014\/12\/2447932-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2014\/12\/2447932.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1-2 msk dijonsenap<\/p>\n<p>1\/2-1 tsk viltkrydda<\/p>\n<p>n\u00e5gra rej\u00e4la tag p\u00e5 pepparkvarnen<\/p>\n<p>salt (men t\u00e4nk p\u00e5 att viltkryddan inneh\u00e5ller salt)<\/p>\n<p>\u00f6rtkrydda t.ex. herbes de Provence, timjan, mejram eller k\u00f6rvel<\/p>\n<p>1-2 \u00e4gg<\/p>\n<p>8 skivor bacon<\/p>\n<p><em>Till svamps\u00e5sen:&nbsp;<a href=\"http:\/\/files.katinkaskitchen.com\/2014\/12\/2447931.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-21149\" src=\"http:\/\/files.katinkaskitchen.com\/2014\/12\/2447931-300x225.jpg\" alt=\"2447931\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2014\/12\/2447931-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2014\/12\/2447931-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2014\/12\/2447931.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/em><\/p>\n<p>Torkade trattkantareller, ca 1-2 dl torkade (ta l\u00e4mplig m\u00e4ngd efter tycke och smak \u2013 t\u00e4nk p\u00e5 att de sv\u00e4ller n\u00e4r de bl\u00f6tlagts) \u2013 bl\u00f6tlagda i hett vatten i ca 20 minuter<\/p>\n<p>1-2 schalottenl\u00f6kar, finhackade<\/p>\n<p>2-3 msk sm\u00f6r<\/p>\n<p>\u00bd-1 dl dl vitt vin&nbsp;eller \u00e4nnu hellre en halvtorr sherry &#8211; passar fantastiskt till svampen!<\/p>\n<p>3 dl Gr\u00e4dde<\/p>\n<p>K\u00f6ttbuljong eller \u2013fond eller vilt- och kantarellfond eller liknande<\/p>\n<p>Ev. lite vatten att sp\u00e4da med<\/p>\n<p>1\/2 tsk dijonsenap<\/p>\n<p>G\u00e4rna en skv\u00e4tt cognac<\/p>\n<p>Svart- och vitpeppar, nymald<\/p>\n<p>g\u00e4rna n\u00e5gra droppar kelpamare som \u00e4r ett naturligt smakmedel<\/p>\n<p>g\u00e4rna n\u00e5gra droppar soja f\u00f6r smak och f\u00e4rg<\/p>\n<p>Tills\u00e4tt g\u00e4rna stekskyn efter du stekt k\u00f6ttet.<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p><em>F\u00f6r viltf\u00e4rsbiffarna:&nbsp;<\/em><\/p>\n<p>Blanda alla ingredienser utom baconskivorna till sen smet. T\u00e4nk p\u00e5 att f\u00e4rs beh\u00f6ver kryddas lite extra f\u00f6r att f\u00e5 fin smak. Forma 8 biffar, linda var och en med en baconskiva. Mina hjortf\u00e4rsbiffar var otroligt sv\u00e5ra att hantera i r\u00e5 form och jag hade fullt sj\u00e5 att f\u00e5 p\u00e5 baconskivorna men n\u00e4r de sedan stektes blev de helt fantastiska och h\u00f6ll ihop mycket b\u00e4ttre \u00e4n vanlig k\u00f6ttf\u00e4rs och blev dessutom underbart saftiga och mycket goda:)<\/p>\n<p>G\u00f6r i ordning dina \u00f6vriga ingredienser, st\u00e4ll in potatisklyftor i ugnen och \u00e4ven rotfrukterna, p\u00e5b\u00f6rja svamps\u00e5sen och stek biffarna lagom till serveringen. Du kan g\u00e4rna st\u00e4lla de f\u00e4rdigstekta biffarna p\u00e5 ett fat i ugnen p\u00e5 100-150 grader medan du steker resten. T\u00e4nk d\u00e5 p\u00e5 att de forts\u00e4tter gr\u00e4ddas i ugnen.<\/p>\n<p><em>F\u00f6r svamps\u00e5sen:&nbsp;<\/em><\/p>\n<p>L\u00e5t kantarellerna sv\u00e4lla i vattnet medan du hackar shalottenl\u00f6ken. Fr\u00e4s l\u00f6ken i sm\u00f6r p\u00e5 l\u00e5g v\u00e4rme i en stekpanna med h\u00f6ga kanter eller trakt\u00f6rpanna. Tills\u00e4tt vinet och l\u00e5t puttra ihop lite \u2013 i synnerhet om du valt vinet. Tills\u00e4tt gr\u00e4dden och smaka av med dijon, fond, peppar och kanske salt samt en skv\u00e4tt cognac.
