H\u00e4r har den f\u00f6rst kokat mjuk i lite vatten, p\u00e5 slutet i vin och sedan f\u00e5tt en enkel vinaigrette \u00f6ver sig varefter den kan serveras varm, ljummen eller kall som del av en vegetarisk meny eller tillbeh\u00f6r till k\u00f6tt, fisk, f\u00e5gel.<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver:<\/strong><\/em><\/p>\n<p>2-3 purjol\u00f6kar, tv\u00e4ttade och skurna i ca 8 cm l\u00e5nga bitar<\/p>\n<p>ca 1 dl vitt vin<\/p>\n<p>salt till kokningen<\/p>\n<p>3 msk god vin\u00e4ger, t.ex. sherryvin\u00e4ger<\/p>\n<p>ca 1 dl olivolja av god kvalitet och smak<\/p>\n<p>salt och peppar<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Sk\u00e4r av l\u00e4ngst ner och l\u00e4ngst upp p\u00e5 purjol\u00f6karna.Tv\u00e4tta dem noga, de kan ofta vara ganska sandiga mellan bladen. Sk\u00e4r dem i lika stora bitar ca 6-8 cm l\u00e5nga. L\u00e4gg dem i kallt vatten i en vid kastrull, l\u00e5t koka upp, salta vattnet och l\u00e5t sjuda drygt 5 minuter tills purjol\u00f6ken b\u00f6rjar bli mjuk. H\u00e4ll av vattnet men l\u00e5t purjon ligga kvar i kastrullen. H\u00e4ll p\u00e5 vinet, l\u00e5t puttra in i l\u00f6ken tills den \u00e4r mjuk men inte helt sladdrig. H\u00e4ll av vinet &#8211; spara det g\u00e4rna f\u00f6r att anv\u00e4nda i s\u00e5s eller gryta. L\u00e4gg upp purjol\u00f6karna vackert p\u00e5 ett uppl\u00e4ggningsfat. R\u00f6r ihop dressingen och h\u00e4ll den \u00f6ver purjol\u00f6ken.
