H\u00e4r har biffarna f\u00e5tt smak av selleri, ingef\u00e4ra, gurkmeja, vitl\u00f6k och serveras en chilikryddad tomats\u00e5s med zucchini och en citronsmakande sesams\u00e5s p\u00e5 tahini &#8211; och r\u00f6tt ris som jag tycker \u00e4r s\u00e4rdeles gott.&nbsp;<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>R\u00f6tt ris &#8211; koka enligt anvisningarna p\u00e5 f\u00f6rpackningen men kom ih\u00e5g att r\u00f6tt ris alltid brukar ta l\u00e4ngre tid att koka \u00e4n vad som vanligtvis anges, enligt min erfarenhet.<a kvalitet<\/p>\n<p>\u00f6rtkryddor, t.ex. k\u00f6rvel, basilika, timjan, rosmarin<\/p>\n<p>ev. gr\u00f6nsaksbuljong<\/p>\n<p><em>Till sesams\u00e5sen:&nbsp;<\/em><\/p>\n<p>3 msk tahini<\/p>\n<p>2-3 msk sojas\u00e5s, Kikkoman eller annan ljus soja<\/p>\n<p>saft fr\u00e5n 1-2 citroner eller limefrukter<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Allra f\u00f6rst s\u00e4tter du p\u00e5 riset. B\u00f6rja sedan med att s\u00e4tta p\u00e5 en kastrull med vatten d\u00e4r du ska koka selleri, mor\u00f6tter och gul l\u00f6k tills den blir mjuk. H\u00e4ll av det mesta av kokvattnet men se g\u00e4rna till att spara det eftersom det \u00e4r en utm\u00e4rkt buljongbas att anv\u00e4nda till soppor.<\/p>\n<p>Stek schalottenl\u00f6ken till biffarna i olivolja p\u00e5 medelh\u00f6g v\u00e4rme s\u00e5 den blir mjuk utan att ta f\u00e4rg.<\/p>\n<p>H\u00e4ll de avsvalnade kokta gr\u00f6nsakerna i en stor sk\u00e5l tillsammans med de avrunna b\u00f6norna, schalottenl\u00f6ken, vitl\u00f6k, chili och kryddor samt citronskal och citronsaft. Tills\u00e4tt \u00e4ven bovetemj\u00f6l och uppvispade \u00e4gg och mixa ihop till en smet. Smaka av s\u00e5 du har ganska ordentligt med smak p\u00e5 blandningen. Du kan beh\u00f6va tills\u00e4tta mer bovetemj\u00f6l s\u00e5 att du f\u00e5r en tillr\u00e4ckligt fast smet som h\u00e5ller ihop n\u00e4r du ska steka den. St\u00e4ll den \u00e5t sidan s\u00e5 l\u00e4nge och l\u00e5t smakerna blandas.<\/p>\n<p>G\u00f6r din tomats\u00e5s: stek l\u00f6k och vitl\u00f6k p\u00e5 medelh\u00f6g v\u00e4rme s\u00e5 blir mjukt utan att ta f\u00e4rg. Tills\u00e4tt chili, tomatkross, tomatpur\u00e9 och \u00f6rtkryddor samt en nypa socker och vin\u00e4ger. L\u00e5t puttra ihop. Mot slutet tills\u00e4tter du zucchinit\u00e4rningarna s\u00e5 de hinner koka n\u00e4stan mjuka men fortfarande inte \u00e4r helt sladdriga.<\/p>\n<p>Blanda ihop ingredienserna till tahinis\u00e5sen, smaka av s\u00e5 du har fin balans. L\u00e5t den st\u00e5 \u00e5t sidan.<\/p>\n<p>Stek gr\u00f6nsaksbiffarna i kokosolja (eller annan olja du v\u00e4ljer), klicka i smeten direkt i pannan och forma dem med en sked eller stekspade s\u00e5 de plattas till s\u00e5 som du ser p\u00e5 bilderna. Stek p\u00e5 medelh\u00f6g v\u00e4rme s\u00e5 de f\u00e5r fin f\u00e4rg och blir lite knapriga i kanten innan du v\u00e4nder och g\u00f6r samma sak p\u00e5 andra sidan.
