Jag hade missat att krama ur zucchinin ordentligt till zucchinibiffar med parmesan och ins\u00e5g att det var l\u00e4ge att g\u00f6ra n\u00e5got helt annat av h\u00e4lften av smeten.&nbsp;Den drygades ut med mer vispat \u00e4gg och fick bli sm\u00e5 delikata miniomeletter som f\u00e5r fin p\u00e5skgul f\u00e4rg av den nyttiga gurkmejan. Parmesan, citronskal och basilika ger h\u00e4rlig italiensk smaks\u00e4ttning. Resultatet blir som sm\u00e5 vackra fluffiga pastejer som passar utm\u00e4rkt att servera till p\u00e5sk &#8211; med prosciutto eller annan skinka eller varf\u00f6r inte med ansjovis, sardeller eller n\u00e5gon kaviar f\u00f6r extra p\u00e5skk\u00e4nsla. Pressa ur all v\u00e4tska ordentligt. Vispa upp \u00e4ggen med smaks\u00e4ttningen, tills\u00e4tt zucchini och parmesan. Blanda ordentligt. H\u00e4ll i en muffinspl\u00e5t som du smort med sm\u00f6r.
