S\u00e5 enkelt &#8211; s\u00e5 gott! F\u00e4rska sm\u00e5 hj\u00e4rtmusslor, vongole p\u00e5 italienska, som \u00e5ngas i vitt vin med olivolja och vitl\u00f6k och blandas med nykokt pasta med det r\u00e4tta al dente-bettet. Det \u00e4r bara att njuta! Det enda sv\u00e5ra med den h\u00e4r r\u00e4tten \u00e4r att f\u00e5 tag p\u00e5 hj\u00e4rtmusslorna, men i bra fiskaff\u00e4rer och marknader brukar det g\u00e5 bra. n\u00e4r du v\u00e4l har dem \u00e4r det h\u00e4r riktig snabbmat! Den passar ocks\u00e5 bra som liten primi piatti &#8211; f\u00f6rr\u00e4tt.&nbsp;<\/strong><\/p>\n<p>Jag har nu l\u00e4rt mig att vongole och hj\u00e4rtmusslor inte alls \u00e4r samma sak, \u00e4ven om vongole oftast \u00f6vers\u00e4tts med hj\u00e4rtmusslor p\u00e5 svenska. Vongole \u00e4r en egen art som \u00e4r fr\u00e5n Medelhavet medan hj\u00e4rtmusslor \u00e4r lite st\u00f6rre och mer r\u00e4fflade och finns uppe i v\u00e5ra kallare vatten. F\u00f6r att n\u00e4rmare och mer korrekt f\u00f6rklara skillnaden beh\u00f6ver jag leta r\u00e4tt p\u00e5 en l\u00e4mplig marinbiolog &#8211; \u00e5terkommer n\u00e4r jag lyckats med det! \ud83d\ude42<\/p>\n<p>Om du fr\u00e5gar en italienare ska det absolut inte vara n\u00e5gon parmesan eller annan ost till den h\u00e4r r\u00e4tten &#8211; det f\u00f6rst\u00f6r den delikata sj\u00f6smaken p\u00e5 musslorna.<\/p>\n<p>Den h\u00e4r vongolen avnj\u00f6t jag f\u00f6rra veckan vid Adriatiska havet, p\u00e5 Italiens \u00f6stkust:)<\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<a href=\"http:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0631.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-22174\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0631-300x225.jpg\" alt=\"IMG_0631\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0631-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0631-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0631-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/em><\/p>\n<p>400 gram spaghetti eller linguine<\/p>\n<p>1 kg hj\u00e4rtmusslor, sk\u00f6ljda och tv\u00e4ttade<\/p>\n<p>2-3 vitl\u00f6ksklyftor, skalade och hackade<\/p>\n<p>4-6 msk olivolja av god kvalitet<\/p>\n<p>1-2 dl vitt vin<\/p>\n<p>salt<\/p>\n<p>g\u00e4rna lite sl\u00e4tbladig persilja, hackad<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Koka pastan i rikligt med saltat vatten s\u00e5 den blir al dente, med en h\u00e5rd k\u00e4rna kvar i mitten. H\u00e4ll av pastavattnet och blanda ner pastan i dina vinkokta musslor som du gjort i ordning enligt nedan.<\/p>\n<p>Fr\u00e4s vitl\u00f6k i olivolja tills mjuknar. Tills\u00e4tt vinet, h\u00f6j v\u00e4rmen och l\u00e4gg i musslorna. L\u00e4gg p\u00e5 locket, skaka runt och l\u00e5t dem \u00e5nga s\u00e5 de precis \u00f6ppnar sig. Ta dem direkt av v\u00e4rmen &#8211; annars blir de bara sega. Servera direkt med din nykokta pasta.
