Jag \u00e4lskar sardeller och den h\u00e4r enkla r\u00e4tten \u00e4r verkligen en hyllning till just sardeller. S\u00e5sen blir kr\u00e4mig och fr\u00e4sch och t\u00e4cker med sin l\u00e4tta emulsion pastan. Den h\u00e4r r\u00e4tten kan serveras som huvudr\u00e4tt med en sidor\u00e4tt av gr\u00f6nsaker eller som f\u00f6rr\u00e4tt i eget majest\u00e4t.&nbsp;<\/strong><\/p>\n<p>F\u00f6r f\u00f6rr\u00e4ttsproportioner tar du lite drygt h\u00e4lften av m\u00e4ngden f\u00f6r 4 personer. Just den h\u00e4r tallriken serverades jag p\u00e5 en h\u00e4rlig restaurang-caf\u00e9 i Rom, och t\u00e4nker att jag kanske hade haft lite persilja p\u00e5 eller n\u00e5got f\u00f6r att piffa till r\u00e4tten. Samtidigt \u00e4lskar jag italienarnas totala avsaknad av tillr\u00e4ttalagdhet, det \u00e4r helt enkelt precis s\u00e5 enkelt och gott det kan bli.<\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>drygt 400 gram spaghetti eller bucatini (en lite tjockare ih\u00e5lig spaghetti) av god kvalitet<\/p>\n<p>1 burk sardellfil\u00e9er, helst inlagda i olivolja<\/p>\n<p>1 vitl\u00f6ksklyfta, skalad och delad p\u00e5 l\u00e4ngden<\/p>\n<p>n\u00e5gra msk av pastavattnet (ganska l\u00e4tt att gl\u00f6mma men klassiskt italienskt knep)<\/p>\n<p>en skv\u00e4tt vitt vin<\/p>\n<p>50 gram sm\u00f6r, rumstempererat<\/p>\n<p>vit- och svartpeppar<\/p>\n<p>ev. n\u00e5gra droppar citron<\/p>\n<p>ev. salt (s\u00e5v\u00e4l sardellerna, pastavattnet som sm\u00f6ret har s\u00e4lta)<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<a href=\"http:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0467.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-22190\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0467-300x225.jpg\" alt=\"IMG_0467\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0467-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0467-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2015\/04\/IMG_0467-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/em><\/p>\n<p>Under tiden som du kokar pastan i rikligt med saltat vatten hackar du sardellfil\u00e9erna, fr\u00e4ser dem i olivolja och n\u00e5gra msk av sm\u00f6ret tillsammans med den delade vitl\u00f6ksklyftan. Mosa s\u00e5 att sardellfil\u00e9erna f\u00f6rdelas och blandar sig med s\u00e5sen. Tills\u00e4tt vinet och l\u00e5t puttra ihop. Vispa i n\u00e5gra msk pastavatten och vispa d\u00e4refter i det rumsvarma sm\u00f6ret lite i taget s\u00e5 du f\u00e5r en fin emulsion. Krydda med peppar och smaka ev. av med n\u00e5gra droppar citron. Lyft bort bitarna av vitl\u00f6ksklyftorna. H\u00e4ll av pastan n\u00e4r den \u00e4r al dente, med en k\u00e4rna av motst\u00e5nd i mitten och v\u00e4nd runt den i s\u00e5sen s\u00e5 pastan helt t\u00e4cks av s\u00e5sen som p\u00e5 bilden.
