Salta och peppra fisken &#8211; jag anv\u00e4nder g\u00e4rna vitpeppar p\u00e5 fisk. Ringla olivolja \u00f6ver. St\u00e4ll in den i ugnen p\u00e5 100-125 grader, g\u00e4rna med termometer i. N\u00e4r innertemperaturen \u00e4r 40-42 grader \u00e4r den klar. St\u00e4ll in fisken f\u00f6rst n\u00e4r du vet att du hinner bli klar med \u00f6vriga saker samtidigt som fisken blir klar. Fisken tar ca 20 minuter beroende p\u00e5 hur kall den \u00e4r och storleken p\u00e5 bitarna.<\/p>\n<p>Skala sparrisen, stek den i stekpanna med lite olivolja. Salta och peppra. L\u00e4gg p\u00e5 ett lock under en del av stektiden s\u00e5 blir den l\u00e4tt kokt. L\u00e4gg i en rej\u00e4l sm\u00f6rklick ungef\u00e4r halvv\u00e4gs genom stektiden, ta av locket och l\u00e5t den steka s\u00e5 sm\u00f6ret n\u00e4stan karamelliseras &#8211; d\u00e5 f\u00e5r du fin f\u00e4rg och underbar smak p\u00e5 sparrisen.<\/p>\n<p>G\u00f6r ramsl\u00f6ken enligt eget recept genom att hacka den, fr\u00e4sa i en del av sm\u00f6ret, l\u00e5t svalna, mixa och blanda med \u00f6vriga sm\u00f6ret, rivet citronskal, salt och peppar.
