Den blir snabbt klar i glassmaskinen och serveras med l\u00e4ttgjord lakritsmar\u00e4ng f\u00f6r fin smakbrytning. L\u00e5t puttra ihop s\u00e5 att sockret l\u00f6ser sig helt och det blir simmigt. St\u00e4ll att svalna. L\u00e4gg de frysta hallonen i en annan tjockbottnad kastrull. Hetta upp p\u00e5 medelh\u00f6g v\u00e4rme, r\u00f6r om d\u00e5 och d\u00e5. N\u00e4r de blivit riktigt genomvarma tar du kastrullen av v\u00e4rmen och l\u00e5ter de ihopkokade hallonen svalna. Sila pur\u00e9n i ett finmaskigt durkslag, tryck och pressa med skeden s\u00e5 du f\u00e5r ut all den goda hallonpur\u00e9n men de sm\u00e5 h\u00e5rda n\u00e5got beska fr\u00f6na stannar i silen.&nbsp;Blanda pur\u00e9n med avsvalnad sockerlag, men ta inte i all sockerlag direkt. Tills\u00e4tt \u00e4ven lite citronjuice f\u00f6r fr\u00e4sch\u00f6r och fin f\u00e4rg. &nbsp;Smaka av ifall du kanske inte &nbsp;beh\u00f6ver allt, men t\u00e4nk p\u00e5 att det som smakar s\u00f6tt nu n\u00e4r det \u00e4r ganska varmt f\u00f6rlorar en hel del s\u00f6tma n\u00e4r sorbeten fryses. Blandningen ska k\u00e4nnas en aning f\u00f6r s\u00f6t nu innan den fryses f\u00f6r att blir riktigt god sedan. St\u00e4ll blandningen kallt tills det \u00e4r dags att h\u00e4lla den i glassmaskinen.<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r med lakritsmar\u00e4ngen:<\/strong><\/em><\/p>\n<p>Vispa \u00e4ggvitorna med n\u00e5gra droppar citron och tv\u00e5 msk av sockret till ett styvt skum. Det tar ca tio minuter s\u00e5 ha t\u00e5lamod! Tills\u00e4tt resten av sockret under vispning, vispa ett tag till s\u00e5 att smeten blir blank och fin. Bred ut smeten ganska tunt p\u00e5 ett bakpl\u00e5tspapper som du l\u00e4gger p\u00e5 en pl\u00e5t. Gr\u00e4dda i 125-150 grader i ca 45 minuter tills mar\u00e4ngen \u00e4r torr och spr\u00f6d. St\u00e4ll den att svalna p\u00e5 torrt st\u00e4lle. Om du inte ska anv\u00e4nda mar\u00e4ngen direkt \u00e4r det b\u00e4st att l\u00e4gga den i en luftt\u00e4t burk s\u00e5 den inte mjuknar av luftfuktigheten, men se till att den \u00e4r helt kall s\u00e5 den inte mjuknar i sin egen \u00e5nga.<\/p>\n<p><em><strong>Servering:&nbsp;<\/strong><\/em><\/p>\n<p>Smula lakritsmar\u00e4ng och l\u00e4gg en liten h\u00f6g p\u00e5 varje portionstallrik att l\u00e4gga en vacker kula sorbet p\u00e5. Smula mar\u00e4ngflagor \u00f6ver, dekorera g\u00e4rna med ett blad mynta eller citronmeliss och kanske halloncoulis (hallonpur\u00e9 du sparat men inte har lika mycket sockerlag i som till sorbeten).
