L\u00e4gg i en h\u00f6g sk\u00e5l f\u00f6r stavmixer eller i en vanlig mixer. Tills\u00e4tt olivolja och lite sesamolja samt \u00e4ggulan. Mixa ihop till en sl\u00e4t mousse. Smaka av, tills\u00e4tt ev. lite hett vatten f\u00f6r en bra konsistens. Det ska bli som en slags emulsion med sm\u00f6ret och oljan i \u00e4ggulan och broccolin. St\u00e4ll moussen \u00e5t sidan s\u00e5 l\u00e4nge. Den ska inte v\u00e4rmas, d\u00e5 koagulerar \u00e4ggulan, men den kan varsamt v\u00e4rmas i ett ljummet vattenbad om man vill.<\/p>\n<p>Blanda ihop allt till s\u00e5sen, smaka av s\u00e5 du har fin balans mellan s\u00e4lta, hetta och syra.<\/p>\n<p>Torka av pilgrimsmusslorna, salt och peppra. Halstra pilgrimsmusslorna p\u00e5 ganska h\u00f6g v\u00e4rme s\u00e5 de f\u00e5r fin f\u00e4rg men fortfarande \u00e4r en aning r\u00e5a inuti.<\/p>\n<p>F\u00f6rv\u00e4rm tallrikarna i ugnen p\u00e5 75-90 grader. Tag fram tallrikarna, l\u00e4gg en klick broccolimousse p\u00e5 varje, l\u00e4gg p\u00e5 pilgrimsmusslor och skeda s\u00e5sen f\u00f6rsiktigt \u00f6ver musslan och bredvid moussen. Dekorera med v\u00e5rl\u00f6k och koriander.
