Vid fiskdisken bredvid hittade jag den i Spanien s\u00e5 uppskattade fisken kummel, merluza p\u00e5 spanska. Den ugnsbakades med olivolja och serverades med de nykokta vax- och gr\u00f6na b\u00f6norna, mor\u00f6tter och en fr\u00e4sch gremolata p\u00e5 persiljan med citronskal och vitl\u00f6k. St\u00e4ll \u00e5t sidan s\u00e5 l\u00e4nge. Den g\u00e5r ganska fort att baka i ca 125-150 graders ugn till en innertemperatur p\u00e5 42-25 grader. Det \u00e4r praktiskt att anv\u00e4nda en stektermometer f\u00f6r att f\u00e5 fisken perfekt.<\/p>\n<p>Rensa b\u00f6norna och mor\u00f6tterna. Sk\u00e4r mor\u00f6tterna p\u00e5 l\u00e4ngden om de \u00e4r tjocka. Koka dem i saltat vatten och likas\u00e5 med b\u00f6norna. N\u00e4r du tycker b\u00f6norna och mor\u00f6tterna har en bra mjukhetsgrad h\u00e4ller du av vattnet och h\u00e4ller tillbaka gr\u00f6nsakerna i kastrullen. H\u00e4ll lite olivolja p\u00e5.<\/p>\n<p>Under tiden som b\u00f6nor och mor\u00f6tter kokar g\u00f6r du gremolatan: Finhacka persiljan, riv skalet p\u00e5 citronen fint, hacka vitl\u00f6ken och blanda allt. Krydda med salt och peppar.
