Jag hade en viltf\u00e4rs p\u00e5 hjort och \u00e4lg, men du kan v\u00e4lja den sort du gillar och f\u00e5r tag p\u00e5. Servera g\u00e4rna med kokta mor\u00f6tter och en gr\u00f6nsallad. Jag str\u00f6dde ocks\u00e5 min nya favorit torkade oliver \u00f6ver det hela f\u00f6r extra smak och f\u00e4rg.&nbsp;<\/strong><\/p>\n<p>De torkade oliverna \u00e4r supergoda och jag anv\u00e4nder dem p\u00e5 en massa r\u00e4tter numera. Du torkar dem l\u00e4tt i mikron efter att ha l\u00e5tit dem rinna av p\u00e5 hush\u00e5llspapper. Ha inte f\u00f6r h\u00f6g v\u00e4rme &#8211; d\u00e5 blir det som kebab uppt\u00e4ckte jag:) N\u00e4r all f\u00e4rs \u00e4r tinad ser du till att mosa den s\u00e5 den \u00e4r finkornig och lite brynt \u00f6verallt. L\u00e4gg d\u00e5 \u00f6ver f\u00e4rsen p\u00e5 ett fat medan du steker l\u00f6k och vitl\u00f6k i samma panna, tills\u00e4tt bara sm\u00f6r och olja f\u00f6rst. Stek ocks\u00e5 svampen om du anv\u00e4nder f\u00e4rsk svamp. Anv\u00e4nder du torkad som jag l\u00e4gger du den i bl\u00f6t i b\u00f6rjan och tills\u00e4tter den samtidigt som tomaterna, se lite l\u00e4ngre fram i texten. N\u00e4r l\u00f6khacket blivit mjukt utan att ta f\u00e4rg h\u00e4ller du tillbaka f\u00e4rsen och kryddar det hela. H\u00e4ll p\u00e5 vinet, l\u00e5t puttra ihop och h\u00e4ll d\u00e4refter p\u00e5 tomaterna och tills\u00e4tt tomatpur\u00e9n. H\u00e4ll ocks\u00e5 p\u00e5 gr\u00e4dden och sherryn. L\u00e5t puttra medan du g\u00f6r i ordning dina gr\u00f6nsaker och b\u00f6rjar koka pastavattnet. Koka pastan al dente, s\u00e5 den har en k\u00e4rna av tuggmotst\u00e5nd. Det \u00e4r s\u00e4rskilt viktigt n\u00e4r du ska blanda pastan med en s\u00e5s som ytterligare mjukar upp pastan. Smaka av k\u00f6ttf\u00e4rss\u00e5sen s\u00e5 den har fin balans i smakerna, kanske du vill ha lite mer viltkrydda och sherry? Blanda ner den nykokta pastan i f\u00e4rsen och servera direkt &#8211; antingen i en kastrull eller stor sk\u00e5l eller direkt p\u00e5 tallrikarna.
