Sk\u00f6lj linserna. Hetta upp olivolja i en tjockbottnad kastrull och l\u00e4gg i bacon. V\u00e4lj g\u00e4rna en kastrull eller gryta som g\u00e5r att st\u00e4lla in i ugnen med lock. Fr\u00e4s tills f\u00e5tt f\u00e4rg och tills\u00e4tt rosmarin, l\u00f6k och vitl\u00f6k. L\u00e5t fr\u00e4sa i ytterligare 2 minuter, tills\u00e4tt sedan linserna och fr\u00e4s en minut till. H\u00e4ll p\u00e5 buljongen. L\u00e4gg p\u00e5 lock, l\u00e5t koka upp och st\u00e4ll sedan in i ugnen f\u00f6r att bakas sjudande i 1 timme i 160 grader eller tills linserna \u00e4r mjuka. R\u00f6r om d\u00e5 och d\u00e5. Det mesta av buljongen ska ha kokat in. Tills\u00e4tt den goda olivoljan och vin\u00e4gern och smaka av med peppar och ev. salt \u2013 det kanske r\u00e4cker med s\u00e4ltan fr\u00e5n baconet. V\u00e4nd ner spenaten, str\u00f6 \u00f6ver salladsl\u00f6k och \u00f6rtkrydda.
