Det b\u00f6rjade med att vi inte hade n\u00e5got l\u00e4mpligt vitt vin att \u00e5nga musslorna i, men v\u00e4l ett italienskt ros\u00e9vin. Ros\u00e9temat tog \u00f6ver och jag fick f\u00f6r mig att sl\u00e4nga i ett g\u00e4ng av de fr\u00e5n MatHem nyss anl\u00e4nda fina cocktailtomaterna f\u00f6r extra rosig f\u00e4rg. En fr\u00f6jd f\u00f6r b\u00e5de \u00f6ga och gom och en alldeles underbart snabblagad middag, perfekt f\u00f6r en fredag i goda v\u00e4nners lag. Doppa g\u00e4rna ett br\u00f6d i den goda vinskyn eller musselsoppa som barnen kallade det f\u00f6r n\u00e4r de var sm\u00e5. H\u00e4ll p\u00e5 tomaterna och l\u00e5t puttra ihop ett litet tag. H\u00e4ll p\u00e5 vinet och \u00f6ka v\u00e4rmen, l\u00e5t reducera s\u00e5 du har tv\u00e5 tredjedelar kvar. Salta och peppra. H\u00e4r kan du pausa om du vill f\u00f6r att hinna ikapp med pastan. Lagar du musslorna f\u00f6r att servera som f\u00f6rr\u00e4tt eller bara med br\u00f6d hoppar du \u00f6ver pastasnacket som kommer h\u00e4r. Pastan kokar du al dente i saltat vatten, den ska fortfarande ha en k\u00e4rna av tuggmotst\u00e5nd i sig &#8211; det \u00e4r s\u00e4rskilt viktigt n\u00e4r den ska blandas med s\u00e5s eftersom pastan mjuknar\/&#8221;kokar&#8221; ytterligare d\u00e5.<\/p>\n<p>N\u00e4r det n\u00e4stan \u00e4r dags att servera r\u00e4tten drar du upp v\u00e4rmen och l\u00e4gger i de rena avrunna musslorna. L\u00e4gg p\u00e5 locket, skaka runt och l\u00e5t dem \u00e5nga ett litet tag tills de \u00f6ppnat sig. De musslor som inte \u00f6ppnat sig sl\u00e4nger du direkt. Blanda i pastan och blanda runt s\u00e5 s\u00e5s kommer p\u00e5 varenda pastastr\u00e5 eller l\u00e4gg upp musslorna direkt. Str\u00f6 \u00f6rtkrydda \u00f6ver och l\u00e4gg upp p\u00e5 fat, str\u00f6 mer \u00f6rtkrydda \u00f6ver och toppa med lite flingsalt och chili.
